A coffee seed
commonly called
coffee bean
is
a seed of the
coffee plant, and
is the source for
coffee.
Even though the
coffee beans are
seeds, they are
referred to as
"beans" because of
their resemblance
to true beans.
UNROASTED VS. ROASTED
Biological molecules
Any molecule that is
present in living
organisms including large
macromolecules such as
proteins, carbohydrates,
lipids and nucleic acid.
As well as small molecules
such as primary
metabolites, secondary
metabolites and natural
products.
Proteins account for 8%
to 12% of dried green
coffee beans.
Carbohydrates make up
about 50% of the dry
weight of green coffee
beans. Sucrose is its
main ingredient.
Lipids are present on
the surface and in the
interior matrix of green
coffee beans.
Structures
Functions
The role of
carbohydrates
is to provide energy, as
they are the body’s main
source of fuel, needed for
physical activity, brain
function and operation of
the organs.
Protein
is
essential to the structure
of red blood cells, for the
proper functioning of
antibodies resisting
infection, for the
regulation of enzymes and
hormones, for growth, and
for the repair of body
tissue.
It is known that
lipids
play a much
more important role in
the body than previously
believed. Played the
role of storage of
energy or forming cell
membranes alone.
Nonvolatile nitrogenous
compounds (including
alkaloids, trigonelline,
proteins and free amino
acids) and carbohydrates
are of major importance
in producing the full
aroma of roses coffee
and for its biological
action.
