Nutrition For Life Chapter 7 Section 1: Carbohydrates, Fats and Proteins What is nutrition? The science or study of food and the ways in which the body uses food What are nutrients? Substances in food that provide energy or help form body tissues and are necessary for life and growth How many nutrients are there? There are 6 classes: – carbohydrates – fats – proteins – vitamins – minerals – water What are carbohydrates? A class of energy giving nutrients that include sugars, starches and fiber What are fats? A class of energy-giving nutrients that are also the main form of energy storage in the body What are proteins? A class of nutrients made up of amino acids, which are needed to build and repair body structures and to regulate processes in the body Why is it important to eat these nutrients? To stay alive, healthy and growing – you must eat the right amount of each nutrient – if you eat incorrectly you can loose/gain weight, not grow properly, sometimes die What happens if you eat too much fat, carbohydrates or proteins? They are stored as fat – increases risk for heart disease, high blood pressure, and other chronic diseases and disorders How you eat now can effect your health in the future!!! Food is like what to our bodies? Food is our fuel – food-> body – gas-> car all the chemical processes that happen in your body to keep you alive and active is called metabolism How do you measure food? Calories = energy Calories are NOT FAT! CARBOHYDRATES= 4 CAL/G PROTEIN= 4 CAL/G FAT= 9CAL/G Where can you find Carbohydrates? Fruit milk cookies potatoes – all of these contain sugars!!!! Are there different types of carbohydrates? Yes! – Simple glucose fructose lactose sucrose – Complex starch glycogen fiber Why is fiber important? Isn’t used for energy Can’t be digested Keeps your intestines healthy, prevents constipation, and may help prevent colon cancer and heart disease Helps trap cholesterol from food you eat (lowers blood cholesterol) Isn’t fat unhealthy? No! Why do we need to eat fat? Body needs it in order to function properly! Adds texture, flavor and aroma to our food Eating too much can cause: weight gain, heart disease and cancer What types of fat are there? Saturated fats: solid at room temperature – example: butter Unsaturated fats: liquid at room temperature Cholesterol: made by your body (liver) and animal tissues (meat, fish, poultry, eggs, dairy products) What are proteins? Made of chains called amino acids muscle, skin, hair, nails made mostly of protein Why do we need proteins? Needed to form hormones, enzymes, antibodies and other important molecules if you eat too much it can be stored as fat you need 20 different amino acids to make up body proteins 9 of the amino acids needed to make up body protein cannot be made by our bodies (essential amino acids) How much do I need?
