The endocrine glands, which include the pineal, pituitary, hypothalamus, thyroid, parathyroid, adrenals, thymus, pancreas, ovaries, and testes, function together to release carefully measured amounts of hormones into the bloodstream. Hormones work as electrochemical messengers and travel throughout the body to balance and direct numerous activities. These messengers are responsible for many important events and processes. The pineal gland, for instance, produces melatonin, an antioxidant that affects sleep, body rhythms and emotional well-being. Hormones can influence the function of the immune system, instigate maturation, regulate menstrual cycles the breakdown of fat, and hair loss or growth. In the womb, hormones manage the chemicals necessary for development. Basically, they relate to every functionof everyday life. Generally, however, they are often thought of only as they relate to the reproductive system. Hormones are “messenger” molecules released by endocrine glands—the adrenals, hypothalamus, pancreas, parathyroids, pineal, pituitary, ovaries, testes, thymus, and thyroid. Hormones help the body function properly by changing the physiological activities of cells. In a healthy person, there is no over or underproduction of the hormones needed. However, before, during and after menopause many women experience hormone deficiencies or excesses. What are the female hormones? A number of hormones are needed to help women menstruate, conceive, bear, and nurture children, and to remain healthy after menstrual cycles end—the menopause. Important hormones in menstrual and menopausal health include estrogens, progesterone, luteinizing hormone, and follicle stimulating hormone. Due to environmental pollution and stress, many women today have “estrogen dominance.” That is, their estrogen levels are too high relative to progesterone levels. This situation aggravates menstrual and menopausal symptoms. Letter from Selina HARMONY It seems that time passes more quickly some years than others. Wasn’t it just yesterday that the snow was falling and holiday festivities had me running from week to week? When I look back on last year (and then the years before that), I am flooded with a mix of emotions and memories. A tapestry of time woven with hopes and dreams, heartbreaks and disappointments looks so wonderful from where I stand today. Who would I be if that tapestry were any different? Lately, I feel the phrase “if only I knew then, what I know now” could be my theme song. I often have to fight the urge to look at my day with a critical eye. Some moments, all I see is what I did not accomplish and what went other than I had planned. Rarely, but on occassion, this spirals into lamenting the fact that I could have spent my days more wisely, could have taken steps to be be healthier, and so on. Then, by prayer, meditation, or serendipity, I am pulled back to my center. Isn’t wisdom the bounty we reap from all of our experiences- good and bad? The articles in this issue again remind me to count my blessings, to set my priorities, to love my body (despite its shortcomings) and cherish the life it allows me. None of us are getting any younger and the up side is that we are presented with challenges that will make us wiser- if we choose to let them. Judgement and criticism are survival skills. They can also do us and others harm. The ability to choose happiness, grace and forgiveness boosts our life from one of survival skills to one of harmony. You, our readers, are very important to me. It was most likely in self defense to keep the doctor from slapping me in the delivery room. I mean how can he slap my little newborn bottom when he’s got tears pouring out of his eyes from laughing so hard! There was an Egyptian Pharaoh who referred to clowns as a “divine wind”. I would like to think that this ancient leader had a sense of humor, or maybe he had a thing for funny people with a flatulence problem. It is better to have a sense of humor while traveling along the hopefully, long road of life. Especially when you accidentally tumble into one of those large sneaky potholes that seem to come out of nowhere. A couple of years before I heard of the wonderful Dr. Patch Adams, I entered nursing school (which is sort of like boot camp in the Army, but much worse! I think my Drill Sergeants were more warm and fuzzy than my nursing instructors). One of my assignments was on the Cancer Ward, which as you can guess, was not the most cheerful working environment. I had a patient who was an older woman, and according to the doctors, did not have long to live. She spent most of her time alone in her darkened room, sobbing quietly to herself, while waiting for Death to visit her. Her family loved her, and tried desperately to console her, but she had given up. For, so dark was her path before her, she just couldn’t respond to their love. She also wouldn’t eat, nor communicate much with the medical staff of the hospital. You see, she wasn’t afraid of death. She was afraid of dying in the hospital. She wanted to be at home when she died. In her own bedroom, with her own things, and among her family and friends. Before I entered Nursing School, I made my living as a professional clown, so per my duties I administrated care to her in a professional manner, but I also brought my clowning experience into our interactions . Like Dr. Patch Adams, I too proudly donned a bedpan hat and my red clown nose. I told jokes, made up silly songs, did little Can Can dances about the room. Sadly, I was discovered by the Head Nurse who was of the strong opinion that skills of nursing and clowning did not go together. Needless to say I did get in a bit of trouble. After my clown bust by the Head Nurse, I still secretly acted the clown with this patient, and at the same time provided her excellent medical care. When her family would arrive for a visit she would always introduce me as her “clown nurse”. She would then expect me to do something clown-like for her family’s entertainment. I would comply, which would get the patient and her family laughing together. After about a week, my patient became very cheerful and responded well to her family visits. Her crying spells ceased and her appetite picked up. The doctor and the other nurses noticed the positive about face of her attitude, and per my patient’s wish she was on her way home. Second, salt is used to assist lactic acid bacteria to take control over other bacteria, yeasts and molds naturally present on fresh vegetables. Thirdly, salt inhibits pectinase in the vegetable thereby blocking the degradation of pectin. Pectin maintains a pleasant, fresh, crunchiness to the vegetables. Is there any loss or damage to the lactic bacteria? Would you recommend refreezing them? Exposure to light over a 6 month period merely degrades the vitamin C, but there is no loss to the lactic acid bacteria and enzymes. When the package is opened and oxygen enters, then shelf-life is reduced. The vegetables are good to eat for one month after opening when tightly wrapped and stored in order to keep the oxygen out. The health effects of chronic low level exposure to pesticide residues are still unknown. Whole, unprocessed foods that you make yourself are healthiest for your child. Infants grow and develop faster than at any other period in their lives. At a time when nutrition is so important, many babies are being fed almost exclusively from boxes and jars. Over-processed foods containing chemicals, preservatives, sugar, sodium, pesticide residue, and genetically engineered ingredients (GMOs) cannot nourish a growing child. Homemade baby food is nutritious, inexpensive, and easy to make. Cooked fruit, vegetables, whole grains, and legumes can be mashed in a blender, food processor, or baby food grinder. Homemade cereal is less processed and fresher than packaged cereal. To save time, prepare enough for several feedings. WHOLE GRAIN INFANT CEREAL In a dry skillet over medium heat, lightly toast 1 to 2 cups organic brown rice, millet, quinoa, or barley for 5 to10 minutes, stirring occasionally. Remove from heat when grains begin to pop. This makes enough for several servings.To keep for later use, cool grains completely and store in a covered jar. To serve: Grind desired amount of toasted grain (about 2 or 3 tablespoons for an infant) to fine powder in a grinder or blender. In a saucepan, whisk together 1 part cereal powder and 6 parts water. Bring to a boil, and simmer uncovered for 30 to 40 minutes, or until soft and smooth. Add extra water if necessary. Variation: The rest of the family can enjoy this cereal too. It tastes similar to Cream of Wheat, only better! Use 1 part cereal to 4 parts water. Cook 15 to 20 minutes. BABY OATMEAL Place 1 to 2 cups rolled oats in blender, food processor or grinder. Grind to fine powder. Store in covered jar. To serve: Whisk together 1 part oat powder and 3 parts water. Bring to a boil and simmer uncovered for 15 minutes, or until soft and smooth. Add more water if cereal is too thick. Foods containing MSG are not always marked clearly. It can be listed as hydrolyzed vegetable protein, caseinate, autolyzed yeast or yeast extract, beef or chicken broth, or natural flavoring. Glutamate, aspartate, and cytesine are naturally occurring amino acids which serve as nuerotransmitters, but in excess they are considered “excitotoxins,” substances that drive neurons to literally over-excite and become permanently damaged. They can have neurologic effects in children such as dyslexia, autism, schizophrenia, seizures, and cerebral palsy. Drag yourself out of bed with difficulty? Regularly hit the snooze button? Find it hard to keep your eyes open in meetings, while reading or when watching TV? Toss and turn for more than an hour before falling asleep? If you answered “yes” to more than one of these questions, you could be sleep-deprived. The consequences might be more serious than you imagine. Some experts believe sleep gives neurons, used while we are awake, a chance to shut down and repair themselves. Without sleep, neurons may become so depleted or polluted with by-products of normal cellular activities that they begin to malfunction. While we may think that we get used to a sleep-deprived schedule, judgment, reaction time and other functions are impaired. Truth is, we never really adapt to getting less sleep than we need. Sleep-deprived people tested in driving simulators or coordination tasks perform as badly as, or worse than, intoxicated respondents. According to the National Highway Traffic Safety Administration, driver fatigue is responsible for an estimated 100,000 motor vehicle accidents and 1500 deaths each year. While anyone who has suffered insomnia (characterized either by an inability to fall asleep or to remain asleep) or who has been burning the candles at both ends can attest, the feelings of fatigue can be immediate and debilitating. Chronic sleep deprivation can actually speed the aging processes and suppress the immune system. Sleep and sleep-related problems play a part in many health conditions. For example, problems like stroke and asthma attacks tend to occur more frequently during the night and early morning, perhaps due to changes in hormones, heart rate, and other changes that occur during sleep. Deep sleep coincides with the release of growth hormone in children and young adults. Many of the body’s cells show increased production and reduced breakdown of proteins during deep sleep. 8 by Elizabeth Ward Our need for, and ability to obtain, quality sleep changes as we age. Young adults spend some 25% of their sleep time in deep sleep. Adults aged fifty to sixty spend 10% or less of their sleep time sleeping deeply. This reduced deep sleep is bothersome as it may be normal or it could be insomnia. If you’re having trouble sleeping more than three times per week you may be suffering from insomnia. Many of the causes of sleeplessness, however, are due to activities and choices made during the day. Insomnia may have many causes, but the usual suspects are: Hormones Melatonin, a neurohormone helps manage sleep cycles. Night sweats are a common indicator of hormonal imbalance. Chronic Stress Adrenal exhaustion, most often caused by stress, suppresses levels of DHEA, a vital regulator of sleep. See our Winter 2003 issue for more info on adrenal exhaustion which can cause lower levels of melatonin and/or DHEA, hormones that promote sleep. Diet/Chemicals A diet high in caffeine, alcohol or sugar and low in certain nutrients may alone be the culprit. Many studies now show that food intolerances can be a major contributor to sleeplessness. See our Spring 2003 issue for more info on food allergies and sensitivities. Eliminate dust mites and chemicals to reduce allergies. (see p 18). Be careful to only use quality aromatherapy products, as some release toxins. Remove the temptation to watch television. Choose happiness. Schedule your days reasonably. Unreasonable expectations are the root of many frustrations.Think happy, positive thoughts. Relaxation exercises, yoga, and meditation are very good tools to help your body and mind relax. Just fifteen minutes of any of these exercises dramatically improves sleep. Don’t do strenuous exercise less than four hours before bedtime. Don’t nap during the day. Choose foods that promote sleep. (see list on following page) Lavender is a natural sleep aid. Soak in a warm bath with a few drops of lavender oil, and place a lavender sachet under your pillow. Most people shouldn’t eat dinner less than three hours before bedtime. Especially highcarbohydrate meals, caffeine or alcohol. Some people, however, may need to eat to avoid nocturnal hypoglycemia (low nighttime blood glucose level) which can cause insomnia. Bedtime snacks to keep blood sugar levels steady throughout the night are oatmeal and other whole grain cereals, whole grain breads, and other complex carbohydrates. It’s a matter of learning to say no, to take time for ourselves. Women don’t do that, they put themselves last. Ink yourself into your calendar at least three times a week. If someone calls, say you have an appointment. Find the balance for yourself, whether it’s meditation, yoga, or whatever pulls you back into your own center.” In her book, Jensen also notes that new research indicates chronic, uncontrolled stress is a primary factor in the development of osteoporosis, and increases breast cancer risk as well. If you go to bed at 8 pm and get up around three or four you wake up so much more refreshed.” (Gates also explains that nighttime computer and television use interfere with sleep by disrupting the pineal gland’s production of melatonin). also see p8 Keeping the liver and colon functioning well is another critical task. Jensen points out that “Hormones the body doesn’t use and those coming from the outside, the liver is supposed to couple these with different agents and shoot these couples out in the bile through the intestine. If the liver is overworked or congested, it doesn’t do things as efficiently. Once these couples hit the gut, they will become divorced if the intestinal bacteria aren’t healthy, then these hormones go back into circulation. Excess estrogen is most predominant today. Ten days out of the month, take herbs to support the liver—dandelion, milk thistle, turmeric. It’s also helpful to drink lemon juice and water, and eat beets, dandelions, and artichokes.” To create colonies of healthy bacteria, Gates advocates cultured foods: “Eating cultured foods on a daily basis is an essential part of maintaining hormone balance. Have them at every meal. I have cultured vegetables, kvass, fermented coconut milk, milk kefir.” Healthy gut flora, she adds, are also essential for effective absorption of nutrients from food. Feeding Your Hormones What foods does the body need to create hormone balance? “We need to understand the danger of refined anything,” says Sellman, “junk food, bad oils, too much sugar. Because the liver plays a key role in metabolizing hormones, too much alcohol, caffeine, fatty foods and spicy foods can exacerbate hot flashes and other symptoms.” Sellman adds that skipping meals is very stressful to the adrenals. The experts have also already touched on the importance of cultured foods and land and ocean vegetables. According to Northrup, “Your basic diet is vegetables, fruits, and protein. Many women really have to be careful about grains. Depending on your genetics, you may not have the equipment to metabolize them well. I think everyone needs some animal protein.” According to Donna Gates’ book, The Body Ecology Diet, a health-building meal consists www.celtic-seasalt.com of 20 percent protein (acid-forming food) and 80 percent vegetables (alkalizing food). Ann Louise Gittleman, PhD and Certified Nutrition Specialist based in Couer D’Alene, Idaho, appreciates meat and eggs for their zinc content, an important nutrient for hormonal health. Gates emphatically advocates using egg yolks: “Raw egg yolks are fabulous for building progesterone and testosterone [important because many women have too much estrogen in relation to these hormones], and they’re a great source of vitamin A, a very important vitamin for hormone balance. Beat one or two a day into drinks or salad dressings.” To energize the thyroid, Gates recommends melting coconut oil in a frying pan, slipping in four eggs and cooking just until the whites congeal and the yolks are soft. If tissue cholesterol is low, you have to increase the saturated fats and decrease the unsaturated fats in the diet. Coconut oil is a good source, and I think the best source of saturated fats is butter. Ann Louise Gittleman is “very impressed with the use of flax as a primary component of hormone balance.” Ground flax seeds, she explains, contain lignans, which have both anti-estrogenic and estrogenic abilities that the body uses as needed. Lignans, she points out, also protect against estrogen-fueled breast cancer and are much more effective than soy in terms of their ability to modulate estrogen. (Gates believes that eating soy is a mistake for menopausal women: “It cools the thyroid, and we need a warm, energetic thyroid. The phytic acid in soy leaches minerals.”) Gittleman suggests that menopausal women take two tablespoons daily of lightly toasted flax seeds (ten to twelve minutes at 250° F) ground, whereas menstruating women who want more regular cycles need about two teaspoons daily. If examination indicates some strong weaknesses, you may require temporary HRT to bring about symptom relief that speeds healing. HRT, for example, may help you to sleep better. Bioidentical hormones are safest, and they should be professionally prescribed based on the results of salivary hormone testing. Some women’s health advisors advocate the use of progesterone cream, but Jensen is wary of this approach: “Women tend to be estrogen dominant. Progesterone is a precursor hormone, it can convert to estrogen. There is a time to give progesterone, but I would do it medically, while addressing the cause of the deficiency. As long as 50 years ago, research was underway regarding the impact of hydrogenated oils on thyroid function. Oils are hydrogenated to lengthen shelf life. This process driven by convenience has contributed to the growing number of Americans trying to outrun high cholesterol and heart disease. As well, there are some foods that can boost thyroid function. See suggetions to right. Thyroid activity, over or under, can be caused by a number of factors: some medicines (lithium and phenylbutazone), radiation, hormone cancers, genetics, poor diet, and iodine in the diet (too much, too little, and/or synthetic iodine). Iodine is one of the main thyroid secretions. It is an important body building agent which detoxifies and decreases inflammation. At later stages in life, iodine deficiency can cause hair loss, slowed speech, and drying and thickening of the skin. An average adult’s iodine requirement is only about a millionth of an ounce (0.00003 grams) per day. Iodine is vital to the delicate balance between health and sickness. In the 1950’s a US health initiative dictated that iodine be added to table salt (as salt was a prevalent and econmical vehicle to carry the supplement). This has created entirely new chain of health issues. The added iodine colors the sodium chloride purple, so the iodized salt is then bleached. The bleaching leaves the salt bitter, so dextrose is then added to enhance the flavor. Finally, anti-caking agents are added to help manage the moisture in salt. This initiative aimed at better health then took salt, a natural product and healthy source for minerals and subjected it to a chemical process where all the minerals are removed (it is then repackaged and sold as supplements or to industry). The by-product of this process, pure sodium chloride, is packaged and sold as iodized table salt. Synthetic iodine (such as that added to table salt) should not be used. There is mounting evidence that the use of synthetically iodized salt recommended by MDs to help the thyroid, commonly makes thyroid conditions worse, tending to generate an overactive thyroid. Processed foods contain iodized salt, therefore, most people who include processed foods in their diets or eat out are consuming adequate (but synthetic) amounts of iodine.
