Food Miles
The 6 R’s are an important checklist. They are used
by designers to reduce the environmental impact of
products.
Reduce -is it possible to reduce the amount of
materials used? This will help to protect valuable
resources.
Rethink - is there a better way to solve this problem
that is less damaging to the environment?
Refuse - this means not accepting things that are
not the best option for the environment. For
example, is the packaging really needed?
Recycle - could recycled materials be used, or is the
product made from materials that are easy to
recycle?
Reuse - could the product have another use? Could
its parts be used in other products? Is this
information clearly communicated on the product?
This will extend its life.
Repair - is the product easy to repair? This will
extend its life.

Food Miles is the distance food travels from
where it is grown to where it is ultimately
purchased or consumed by the end user. They
will travel hundreds, if not thousands, of miles
before it is delivered to your plate? The more
food miles that attach to a given food, the less
sustainable and the less environmentally
desirable that food is.

Imperial China is an example of
traditional Chinese cuisine. Many people
enjoy this type of cuisine so much that
many villages have a takeaway of similar
or the same dishes. Chicken, duck,
seafood and spices are the main feature
of Chinese dishes. Many people enjoy
this type of cuisine, and like to recreate
them at home, buying all types of
different spices imported from China.
This has also transformed simple dishes
and basic home cooking.
Originally, Fast Food wasn’t always burgers
and fries, but pies, pasties, flans, waffles,
pancakes and other foods we’d consider to
be easily home-made. The term ‘Fast Food’
originated from Rome, in the Roman times,
when the urban population, living in
apartment blocks, depended on food
vendors for most of their food supplies.
Later during the Middle Ages this idea
spread to many parts of Europe in large
towns and major urban areas in cities such
as London and Paris. It wasn’t until later,
after World War 1, that cars become more
affordable, an American company created
the first drive through restaurant and
served the first Burger, this is what we
know as popular fast food. Following the
success of the company they set up chains
all over the world and now America own
the biggest fast food industry in the world.
Founded in the 1930’s, KFC is just one
of the largest Fast Food chains along
side with McDonalds and Burger King.
Other variations of the same types of
food include McCafe and Quick (in
Europe). Many people enjoy fast food
when they’re out and about and don’t
want to wait about in a restaurant.
Fast foods aren’t very common in
home cooking as they require lots of
oil and can lead to common weight
problems such as obesity.
Subway is the largest fast food outlet
in the world, overtaking McDonalds
in 2007. Pressure on Fast Food
companies to make their products
healthier for consumers; Subway
have taken a alternative route from
burgers and fries, to handmade
sandwiches and subs. Subway allow
consumers to chose exactly what
goes in their subs and is a much
healthier alternative. Many cities
have at least 3 different fast food
outlets in the city centre or the
outskirts. Other fast food outlets
include Kebab shops, Fish and Chip
shops, Indian and Chinese
Takeaways. All very popular for busy
parents and students who may not
have an oven or microwave.

All products sold in shops have food miles.
Food miles is the distance that the product
has travelled before it reaches it’s final
destination. As the climate in England isn’t
very good, many common fruits, such as
bananas, oranges, lemons, limes, peaches,
and vegetables, for example; peppers and
aubergines, cannot be grown, and as many
people enjoy eating them and cooking with
them, but all the fuel used to power the
ships and planes used to import the foods
is polluting the environment. These types
of pollution can cause global warming, and
the enhanced greenhouse effect. Crude oil
and fossil fuels are also in short supply.
Organic Produce
Organic produce are foods
that are grown without the
use of pesticides and
enhancers. These foods are
better for your health and
better for the environment.
Fairtrade foods are foods
that are brought at a fair
price. This means that the
farmers who grow the
products can live a better
life because they’re being
paid a more fair price. This
means people living in third
world countries can live a
better lifestyle and ear
their own money.
Locally Sourced
Ingredients
Locally sourced ingredients
are ingredients that are grown
locally. This means they don’t
have very many food miles,
and therefore are a lot more
eco friendly.
Different foods come in different
packaging, and all the different
packaging has to be made and
disposed of differently. Most
packaging is made out of plastic
and plastic is made out of crude
oil which is in scarce supplies,
manufacturers have to think of
other more sustainable ways to
package food.
Waste
A government policy meant that
manufactures had to make a certain
percentage of their packaging
reusable and many people were
encouraged to recycle, this made
packaging a lot more sustainable and
eco friendly.
Religion
Different people have
different religions, and
different religions eat
different foods. Many
people like to try out
different foods from
these different religions
and then if they like
them will start making
them at home. This way
foods spread
throughout a culture
and become more
popular.
TV Chefs
Many famous chefs around the world are
foreign. And because we have common
house hold devices such as TV’s and
Radios etc, we can tune into show that
foreign chefs host. For example Raymond
Blanc has a cooking show, and many
people enjoy watching and learning about
French Cuisine. These recipes spread and
become more popular until they come
part of the nations menu.
British Foods
Travel
People like to travel. And
when they do so they
like to try different
foods. If they enjoy
them they’ll look for
them in their local
supermarkets or even
get them imported.
They’ll share their
experiences and others
will want to try these
foods too. They spread
through the culture until
they become so
common people don’t
think of them as being
exotic anymore.
Many dishes we know to be British really aren’t British. The
most popular dish in the British Culture, a Full English
Breakfast, really isn’t British at all, because many of the
ingredients have be brought over along from lots of different
countries. Take sausages for example. They actually come
over from Germany, even though many people associate
British culture with ‘Pork British’ Sausages. Another common
misconception is tea. Tea actually comes from India. Many
people think that tea is British as it’s always associated with
traditional British ‘Afternoon Tea’.
Another famous ‘seaside’ dish, is Fish and Chips. This isn’t
British at all, fried fish coming from Portugal, and chips
actually coming from Belgium. Moreover, potatoes
themselves come from Peru.
However, foods we recognise to be from different cultures,
actually come from Britain. Take Chicken Tikka Masala for
example. People associate this dish with being Indian. Even
Lasagne, which is commonly thought to be an Italian dish,
turns out is British.
Why do we eat so many foods from
different cultures?
Because as people have immigrated
to Britain they have brought their
food cultures with them and shared it
with other people in Britain. Likewise
because as people from Britain travel
outside the UK they come across
different food cultures that they may
bring back with them to introduce to
Britain.
Another reason could be religion, as
certain religions have certain food
cultures to follow and followers of
these religions will therefore
introduce their food cultures to
Britain.
The media also affects food culture.
The advertising of certain foods is
likely to affect their popularity in
Britain.
The type of food that television chefs
cook will similarly affect food culture
as it puts more advertising and
recipes into that type of food for
people to see and eat.
The “Chef Effect” is where
supermarkets have to deal with a
high demand for foods because that
is what chef have used in their
cooking.

World Food and Environmental Consequences
It is important to use Fair-trade products to support farmers
and workers in the developing world. Fair-trade ensures
the workers have fair terms of trade, which is important for
the workers.
Organic produce is important to use because they do not
have any synthetic pesticides/chemical fertiliser/or artificial
preservatives. These can alter the taste of food and are
less safe and healthy than organic food.
Food miles is the distance food has travelled from its
production to the customer. Food miles should be taken
into account in order to reduce my carbon footprint and
make my foods have less of an impact on the environment
from transport’s carbon emissions.
It is important to use local produce as you are supporting
local farmers and businesses also you are able you talk to
the farmer and see where your food comes from. If you
cannot buy local produce then it is good to buy food made
in Britain.
The packaging of products should be taken into account in
order to benefit the environment. Packaging such as
plastic; many plastics are made with oil. Not only is this
hard to breakdown as most plastics are non-degradable,
plastic also uses around 8% of the worlds annual oil
production. Packaging such as paper bags and degradable
plastics and food skins are better for the environment.
It is good to minimise the amount of food you buy so that
you minimise the wasted food. Also consider reusing and
recycling food into other meals or giving away any extra
food to other people to cook with. This helps to reduce
waste.
“An estimated 15 million tonnes of food wasted in Britain
from the plough to the plate.” Food waste has a bad effect
on the environment due to the large amounts going to
landfill sites. I will take into account not wasting food and
reusing any unused food.
Nutrition is needed to fight illness, for growth and repair of bones and muscles , also to avoid
weight related issues. Nutrients such as vitamins, minerals, fibre, energy and protein are all
important for good health. It is good to have meals based on carbohydrates containing starch, with
a range of fruit and vegetables and foods containing protein and also calcium. It is also important
to drink enough water so that we do not become dehydrated. Sugary foods are okay in small
amounts but should not be eaten too frequently. It is important to recognise that different target
markets have different nutritional needs; for example children need different nutrients and
amounts to adults and elderly people.

Traditionally food has been meat or fish served with
potatoes and vegetables but as the generations have
gone on we have been eating more cultured food.
Even dishes that we think have originated from
Britain we have gotten from abroad, for example fish
and chips, fried fish originated from Portugal and
chips from Belgium.
However dishes like chicken tikka masala, apple
pie, lasagna and haggis all originated from
Britain.
Fresh fruit and vegetables during the winter we
get them shipped to us from other countries as
we don’t have the weather to grow them here
however this produces large food miles so the
prices have to be heightened.
At the moment the most popular dish in England is
curry and Italian ready meals are more popular
than dishes like shepherds pie.
Different cultures have come to britain in many
ways. In Britain there are Italian, Chinese,
Indian, Spanish restaurants everywhere.
However pub food is still common, providing
foods such as steak and chips, bangers and
mush, fish and chips, sticky toffee pudding and
ice cream. Nearly 21% of restaurants in London
serve pub styled food.
Fast food places are getting a bigger cut of the
restaurant market as places like McDonalds,
KFC, Subway and Costa as they provide quick
and easy food that appeals to the public.
Italian Cuisine
Italians main meal of the day is lunch, this meal
consists of a maximum of five courses. Italians eat
a lot of food that isn’t normally eaten in the UK like
snails, horse, donkey, hedgehog, goat, guinea pig
and many other animals.
Normally in Italy you only drink milky coffee in the
mornings with cakes and biscuits and then at no
other times.
Pizza was invented in Naples during the 18th
century, originally for food for poor but at this
time it was only a flatbread.
Pasta is the most important food in Italy and
you always find it in any Italy restaurant you go
into.
Chinese Cuisine
Chinese foods pay close attention to the colour,
aroma, taste and shape. These factors are all
important to make the food appealing to the people
eating it.
There are two main components to a traditional
chinese meal the first one is either rice or noodles
and the second is either vegetables, meat or fish.
Some traditional chinese dishes are peking duck,
jellyfish, century eggs, chicken feet, chow fun, hot
pot, shrimp dumpling soup and tofu.
Chinese takeaways are the largest takeaways in the
UK. Restaurants have been set up so you can get fresh
chinese otherwise you can buy it from supermarkets to
enjoy at home.
