It is important to point out the considerable nutritional value of acorn-fed Iberico ham. There is a
widespread but erroneous view that products made from pork are unhealthy, which comes from the
fact that most of these affirmations are based on studies carried out on pigs other than the Iberico
breed.
More than 60% of the fat contained in products made from the meat of Iberico pigs is made up of
monounsaturated fatty acids and oleic acid which, according to different scientific studies,
encourage the presence of HDL (harmless or good cholesterol) in the blood and reduce the levels of
LDL (harmful or bad cholesterol). Only olive oil has higher oleic acid content. These characteristics
increase among free-range acorn-fed Iberico pigs. In this case, the acorns lead to more than 75% of
fatty acids being unsaturated, making the products healthier than some vegetable fats.
In addition to the beneficial effect on cholesterol, the contribution of protein and vitamins from
Iberico ham is worth noting.
In terms of protein, we do not only need to highlight the protein contribution itself, but also and
more importantly, the quality of that protein, thanks to its high level of essential amino acids. In
terms of protein content, only human milk and eggs have higher biological values than Iberico pork.
As for vitamins, it should be noted that Iberico pork is especially rich in B group vitamins (B1, B2, B6
and B12), niacin and folic acid. Furthermore, cured ham is an excellent antioxidant and has a high
vitamin E content.
Finally, it must be mentioned that the products made from the meat of Iberico pigs are very rich in
a wide range of minerals, including zinc and iron, both minerals that are not easily incorporated into
any diet.
