Q When I buy this milk – how much money goes back to the farmer here in Australia?
A. Devondale Murray Goulburn is a 100% dairy farmer controlled co-operative and our product range is
made using high quality milk sourced directly from our farmer shareholders, and manufactured in
Australia to stringent quality and safety standards. The primary objective of the co-op is to increase the
farm gate milk price for our farmer/shareholders.

Q. What is in Milk?
A. Milk is a highly nutritious safe, natural food which comes from cows . Consumers today can choose
from a wide array of different products including regular, and low fat milk to suit their taste and diet.
Whole milk is made up of milk-fat, protein, milk-sugar (lactose), water, vitamins and minerals (including
calcium).
Low fat is made from whole milk with some fat removed
Q. Does Devondale chilled milk contain permeate?
A. No
What is permeate?
A.
Devondale chilled milk does not contain permeate. Permeate is the term used to describe the milksugar (lactose) and minerals part of whole milk. Permeate is produced by passing milk through a fine
sieve to separate milk sugars and minerals from milk protein and fat.
Because milk is a natural food that comes straight from the cow, its composition can naturally vary by
farm and by breed. Regional and seasonal factors also contribute to significant differences in milk
composition.

Government regulations ensure that milk and dairy products conform to food standards for quality,
consistency and food safety, with the composition of milk governed by the Food Standards Australia
New Zealand (FSANZ) Food Standards Code.
The Food Standards Code allows manufacturers to use milk components to standardise the
composition of milk sourced from dairy farms, as required, to produce more nutritionally consistent
products.
Under the Food Standards Code, components of milk can be added to or withdrawn from milk to
standardise natural variations in fat and protein and produce a range of consistent and nutritious
products. Manufacturers such as ourselves vary naturally occurring milk components to produce a
variety of milks to meet consumer demand consistent with the regulations.
Q. Why does some milk products say permeate free or no added permeate?
Products make ‘permeate free’ or ‘no added permeate’ claims to indicate that additional permeate has
not been used to standardise the composition of the milk.
Q What is the shelf life of fresh milk?
A. The use by date is found on front of pack is indicated below Consumers can easily recognise the
date to have consumed Devondale chilled milk by referencing the USE BY date on the front label.
Q. Is Devondale fresh milk reconstituted?
A. No. Our Devondale chilled milk is produced to the highest quality from fresh milk sourced directly
from our Australian dairy farmer shareholders. The milk is homogenised and pasteurised and not
reconstituted.
Q. What is ‘homogenised’?
A. Homogenisation is a physical process of ensuring that the milk fat globules are of a certain size and
are uniform. This makes sure that the fat does not separate out into a layer at the top of the
milk. There are no chemicals used in homogenisation.
Q. What is ‘pasteurised’?
A. Pasteurisation is a critical step in dairy manufacture. Pasteurisation is a heat treatment process
that ensures hazardous bacteria (pathogens) are not present in milk; it also greatly reduces the total

number of microorganisms present in milk. Due to its critical nature, pasteurisation is tightly regulated
and enforced by government bodies such as FSANZ. Pasteurisation is a traditional and typical
method of food preservation and requires no chemical additions.
Q What is A1 and A2 milk?
A. Milk naturally contains many different proteins including A1 and A2 beta-casein protein. The
proportion of various proteins can be quite different in the milk from different breeds of cows and in the
milk from other animals.
Devondale has approximately 60% of the A2 beta-casein protein. All types of milk are part of a healthy
balanced diet as recommended in the Australian Dietary Guidelines.
Q. Is Devondale chilled milk the same as A2 milk?
A. At Devondale Murray Goulburn we don’t separate out the cow’s milk produced by the different
breeds in the various herds across Australia. Devondale Chilled Milk consists of both A1 and A2
proteins.
