Building Lipid and Protein Molecules
Purpose: To model dehydration synthesis reactions resulting in the formation of either protein or lipid
molecules.
Materials:
14 black carbon atoms
13 red oxygen atoms
4 blue nitrogen atoms
32 white hydrogen atoms
58 green covalent bonds
Procedure: As you work through this procedure fill in the data sheet and answer the questions.
1. Each student in the group should make one of the three different fatty acids and glycerol shown
below.
a. How are the fatty acids similar to each other? ___________________________________________
__________________________________________________________________________________
b. How are the fatty acids different from each other? _______________________________________
__________________________________________________________________________________
2. Make a fat molecule by removing an H from the carboxyl group end of each acid and three OH
from the glycerol.
3. Atttach the OH and H ends to form water molecules.
a. Represent this reaction using the chemical formulas and names.
b. What type of reaction is this? _________________________________ Why? _________________
__________________________________________________________________________________
4. Each student in the group should construct one of the four amino acids shown below.
a. How are the amino acids similar to each other? _________________________________________
__________________________________________________________________________________
b. How are the amino acids different to each other? ________________________________________
__________________________________________________________________________________
c. How are amino acids similar to fatty acids? _____________________________________________
__________________________________________________________________________________
d. How are amino acids different from fatty acids? _________________________________________
__________________________________________________________________________________
5. Remove the OH group from one amino acid and an H from another amino acid. Join the OH and H.
Join the amino acids.
a. Name the two molecules that were formed. ____________________________________________
b. How is the formation of a protein similar to the formation of a fat? __________________________
