In a separate bowl, beat butter and sugar with a mixer on med-high speed until fluffy. Add eggs one at a time, beating well after each addition. Beat in golden syrup. Reduce speed to low and gradually add in flour mixture until just incorporated. Divide dough into three portions and cover with plastic wrap. Refrigerate 1 hour. Preheat oven to 180˚C. On a lightly floured piece of baking paper, roll out the dough. Put in the freezer on a tray for 15 minutes – this makes the cut shapes more defined and easier to handle. Cut out the Christmas shapes and place on a tray lined with baking paper. Bake the cookies for 1215 minutes until crisp. Let them cool on the tray or a wire rack. When cold, ice with designs of your choice using royal icing. Decorate if you wish. NB: To achieve the contrasting colours, simply divide the total mix into two bowls when measuring out. For the dark colour use brown sugar instead of castor sugar and treacle instead of golden syrup. Place a hole in the top (with a skewer) before baking if you are going to hang or tie a ribbon through.
