SAMPLE PROBLEM
DAIRY FOODS CDE TEAM EVENT
Teams will be given a table showing results of monthly tests performed on a single dairy
farm and will perform four tests to complete the table. They will use the completed table to
decide whether actions should be taken for violations of any or all of the regulations or
industry standards.
Below is a sample table. Teams need to fill in the blanks then prepare their report for
presentation to a team of evaluators.

Remarks: Numbers below apply to each respective test, top to bottom of the table.
1. In this example the producer would have received a “warning letter and one more
bacterial count above the 100,000/mL limit would cause the permit to sell grade A
milk to be suspended.
2. No count is above the somatic cell limit of 750,00/milliliter.
3. One temperature is in violation of the upper limit.
4. One shipment of milk would have been rejected and subsequently destroyed
because of a beta-lactam antibiotic in it.
5. Two freezing point tests (months 2 and 4) strongly suggest adulteration with water
leading to action by the regulatory authority.
6. The sample for month 4 contained a high amount of lactic acid meaning that
bacteria had grown as was suggested by the high temperature reading for the same
tank of milk.
