Dessert - Layered Raw Cacao Coconut Slice Base Ingredients 250g raw cashews 25g coconut oil Middle Ingredients 100g pitted dates or Turkish apricots 120g goji berries 50g pea protein powder 10g cacao powder 10g vanilla extract 2-3 tbsp water Top Ingredients 25g coconut oil 10g shredded coconut 10g cacao powder 10g pea protein powder 5g vanilla extract (5g shredded coconut to sprinkle on very top) Instructions Lightly spray cake tin with rice bran oil Blend cashews and make a powder. Melt coconut oil and add to the cashew mixture and blend. Place in bottom of cake tin and press down firmly Crush goji berries and dates until tiny. Add to bowl with all other ingredients and stir. Add to the cakes tin and press down firmly on top of the cashew mixture. In a bowl add the coconut oil (melt if needed) and add all other ingredients and mix. Use the back of a spoon to smooth over top of mixture and finish with a sprinkle of shredded coconut. Refrigerate immediately for 3 hours before serving. Serves 12 Gluten free, dairy free, vegan
