LISTERIA REMEDIATION : TOP FIVE THINGS TO KNOW Listeria monocytogenes is ubiquitous in nature due to its inherent ability to survive and grow under a wide range of adverse environmental conditions, such as refrigeration temperatures, high acidity, salinity and reduced water activity. Because of its pervasive nature and presence in raw ingredients, processing facilities have elevated risk. 1. Watch the Hard Surfaces Listeria monocytogenes cells attached to equipment surfaces can detach and multiply in food products, posing a significant health risk. Moreover, detached cells may exhibit a higher tolerance to stressful conditions than cells in suspension, depending on the growth environment before and after transit. Even old or injured detached cells can cause serious harm1. Pure Advantage: It’s imperative to use true disinfectants on all hard surfaces that potentially come into contact with raw materials. Zero Tolerance for RTE Because of Listeria’s ubiquitous nature and ability to move from raw products to hard surfaces, drain contamination prevention is critical in any food processing operation. Every effort should be made to prevent contamination from Listeria and prevent recontamination in ready-to-eat (RTE) foods. The latest figures from the Centers for Disease Control (CDC) indicate there have been as many as 2,500 cases of Listeria, and as many as 495 deaths, each year. While the infectious dose has not been established at this time, the increase in food borne illness associated with Listeria in meat and poultry products has prompted the United States Department of Agriculture (USDA) to issue a zero tolerance policy for the organism in RTE foods. This has resulted in a large number of food recalls since 19984. Don’t Forget the Drains Because of its pervasive nature, Listeria can often be found in processing facility drains. Poorly maintained drains become unpleasant over time, which may cause workers to continue to neglect these critical pathways. As a result of this cycle of neglect, Listeria can easily migrate from drains onto surfaces where food is processed and handled, leading to contamination of the food itself. This transfer can occur in several ways: • Food traffic or rolling carts • High-pressure cleaning or vigorous scrubbing may aerosolize Listeria, allowing it to translocate to equipment and other surfaces • Equipment left sitting over a drain or dropped onto one • Employees’ clothing, hands and gloves • Pests such as flies Pure Advantage: All of these provide ways for Listeria to move from a non-food contact surface, such as the floor or a drain, to food or food-contact surfaces. Before success can be achieved with remediation, Listeria must be eliminated from harborage points, such as floor drains3.
