Our menus have been carefully designed to provide you with a varied
and interesting choice of nutritious, well balanced and appetising
food, suitable for your diet.
Strategic Aims
• Creating the right overall environment for good nutrition and hydration.
• Delivering the right nutritional content within the menu.
• Making sure that Patients needs are properly identified and met.
We deliver these strategic aims by:
• Offering a choice of appetising, healthy and nourishing meals.
• Preparing meals using seasonal fresh foods from local suppliers/
growers,
• Providing a range of refreshing drinks seven times per day.
• Fresh Fruit, Fruit Salad and Biscuits are provided on the ward 24/7.
Please ask a member of the ward team if you would like a snack
in-between meals.
• Providing support with eating meals at each mealtime, if required,
• Providing meals in a calm and quiet environment (free from
avoidable interruptions).
• Providing meals that respect diversity, faith and cultural choice,
• Monitoring quality by: ward observation audits, unannounced
food tasting, ask our patients for their feedback both on the ward
and in the Patient Food Forum and run a Food and Nutrition action
program to ensure continuous improvement.
If you miss a meal or require assistance with your meals, please ask a
member of the ward team.

A Chef is available in our on-site kitchen from 6.00am until 6.30pm.
If you have missed your meals outside of these hours, a hot meal can be
obtained, please ask a member of the ward team. Meals are available from
the following ward kitchens:Chilmark, Amesbury, Lavestock, Burns & Britford.
Vending services are provided throughout the
site with access to hot and cold drinks, snacks,
filled rolls and sandwiches, 24 hours a day.

Springs restaurant is located on level 2 and offers
a range of hot and cold meals, salads, cakes and
snacks, along with a wide selection of hot and cold
drinks.
Open: 8.30am to 7.30pm on weekdays and
10.00am to 7.00pm at weekends & Bank Holidays
Hedgerows coffee shop is located in the central corridor (near entrance B)
and provides a selection of sandwiches, rolls, paninis and baguettes, soup,
fruit, cakes, smoothies, hot and cold drinks.
Open: Monday to Friday (Excluding Bank Holidays) 8.30am to 3.30pm
Staff Club Leisure Centre
Located from Entrance B (around the Green) serving Sandwiches/Rolls,
snacks, hot and cold drinks.
Open: 7.00am to 8.30pm Mon - Fri & 10.00am to 4.30pm Sat/Sun

Menus and Dietary Information
We operate a protected mealtime policy to ensure that whilst you
are eating your meal there are minimal disruptions on the ward.
Protected Mealtimes are times set aside solely for patients to eat
meals and all non-urgent activities on the ward are stopped.
All patient meals are subject to a nutritional analysis to ensure that all of the
choices meet national dietary standards. If you are following a special diet
please think carefully about your choice and use the diet codes to help you.
If you are unsure whether a particular meal choice is suitable for you please
ask a member of ward staff.
Eating for Health
Our standard hospital menu provides:

A range of ‘Soft’ food choices
Food choices suitable for patients with Diabetes
Small, Medium and Large portion sizes
Small portions of energy dense food on a side plate for those with a
small appetite
In addition to our standard menu we can provide a wide range of dietary
requirements to meet both personal diet choices as well as cultural ones.
• A large print pictorial menu folder and Finger Food menu to support
patients with dementia
• A Children’s menu
• A menu with modified food textures, meeting nationally agreed texture
descriptors (C, D & E)
• Allergy aware menu (including vegan and gluten free choices)
• Halal and Kosher choices. Although there is no printed menu, a range
of meals are available upon request.
• A menu for Neutropenic diets
Eating well is an important part of your treatment, if you have any dietary
needs which are not provided for by these menus, please advise a member
of the ward team.
Symbols and Diet Codes
You will notice diet codes alongside most of the menu dishes.
These are to help you to easily identify the following dietary considerations:
GF= Gluten Free V = Vegetarian Diet S = Soft Diet

The Eatwell Plate
The eatwell plate is designed to show how much of what you eat should
come from each food group. This includes everything you eat during the
day, including snacks.
So, try to eat:
• Plenty of fruit and vegetables
• Plenty of bread, rice, potatoes, pasta and other starchy foods – choose
wholegrain varieties whenever you can
• Some milk and dairy foods
• Some meat, fish, eggs, beans and other non-dairy sources of protein
• Just a small amount of foods and drinks high in fat and/or sugar.
• Where possible try to choose options that are lower in fat, salt and sugar.
• You don’t need to get the balance right at every meal but try to get it
right over time such as a whole day or week.
Patients with specific dietary requirements should follow advice given by
your healthcare professional.
Condiments & Sauces
To support healthy eating, we do not routinely add salt when preparing
your meal. Salt, pepper, vinegar and other sauces are available. Please ask
for them.
Drinks
A range of hot and cold drinks including tea, coffee and fruit squash, will
be served with meals and throughout the day. Please ask a member of
the ward team if you would like fresh water and/or a hot or cold drink.
Decaffeinated coffee, tea or fruit squash is available upon request.
Snacks
Fresh Fruit, Fruit Salad and Biscuits are available on the ward 24/7. Please
ask a member of the ward team if you would like a snack in-between meals.

A balanced diet is essential for health and this is particularly important when
you are in hospital as a good diet can assist your recovery.
The Gold Tray
The Gold Tray has been introduced to
assist in the management of nutritionally
at risk patients and to support actions that
staff need to take to provide appropriate
assistance at meal times.
A patient’s meal should be served on a ‘Gold Tray’ when:
1. The patient has been nutritionally scored and idenfies at either medium
or high risk
2. The patient requires assistance with meals i.e. needs support cutting
food up, opening packets
3. The family/carer has requested the patient is assisted with meals

4. The patient has unwanted weight loss
5. The patient has increased nutritional needs
6. The patient has eaten little for 2 days or more
7. The patient is confused or demonstrates a lack of motivation to eat
8. There is a need to record the quantity of food consumed
9. The patient requires additional time to eat meals
10. The patient requires adapted cutlery or modifications to the eating
environment to support the consumption of food

Red Tractor
Red Tractor covers all aspects of the supply chain from farms to
fork. This includes food safety and traceability, animal welfare,
and environmental protection. The logo is not just about Farm
Assurance. Standards must be met at every critical link in the
food supply chain. The Union Jack in the logo indicates food
has been farmed, processed and packed all in the UK.

All our fish is caught using ethical and sustainable
methods which has been certified by the Marine
Stewardship Council (MSC). We source our fish from
a local company who support local fisherman.

Eggs
Our eggs are 100% British and carry the Lion mark. Also meeting the
standard from the Government Buying Solutions our eggs are from 100%
Enriched Caged Hens.
Coffee/tea/sugar
Tea and coffee served in our restaurant and coffee shop
contains ingredients sourced from Rainforest Alliance
Certified farms or forests. These farms and forests are
managed according to rigorous environmental, social
and economic criteria designed to conserve wildlife;
safeguard soils and waterways; protect workers, their families and local
communities; and increase livelihoods in order to achieve true, long-term
sustainability.
Local, Growers and Suppliers
Where possible we procure our food, Ingrediant, products and packaging
from local growers and suppliers. We consider all aspects including those
linked to the environmental impact and sustainability.
Eating for Health
Below are a list of products that are not Red Tractor approved:
Allergens
The following list tells you what these allergens are and provides some
examples of foods where they may be found:
Celery
This includes celery stalks, leaves and seeds
and celeriac. It is often found in celery salt,
salads, some meat products, soups and
stock cubes.
Allergens
This includes wheat (such as spelt and

It is often found in foods containing flour, such
gluten
as some baking powders, batter, breadcrumbs,
bread, cakes, couscous, meat products,
pasta, pastry, sauces, soups and foods dusted
with flour. The cereal will need to be declared.
However, it is up to you if you want to declare
the presence of gluten with this.
Crustaceans This includes crabs, lobster, prawns and
scampi. It is often found in shrimp paste
used in Thai curries or salads.
Eggs This is often found in cakes, some meat
products, mayonnaise, mousses, pasta, quiche,
sauces and foods brushed or glazed with egg
Fish This is often found in some fish sauces,
pizzas, relishes, salad dressings, stock
cubes and in Worcestershire sauce.
Lupin
This includes lupin seeds and flour, and can
be found in some types of bread, pastries
and pasta.
Milk
This is found in butter, cheese, cream, milk
powders and yoghurt. It is often used in foods
glazed with milk, powdered soups and sauces.
Molluscs
This includes mussels, land snails, squid
and whelks. It is often found in oyster sauce
or as an ingredient in fish stews.
Mustard
This includes liquid mustard, mustard
powder and mustard seeds. It is often
found in breads, curries, marinades, meat
products, salad dressing, sauces and soups.
Nuts This includes almonds, hazelnuts, walnuts,
cashews, pecan nuts, Brazil nuts, pistachio
nuts, macadamia or Queensland nuts. These
can be found in breads, biscuits, crackers,
desserts, ice cream, marzipan (almond paste),
nut oils and sauces. Ground, crushed or flaked
almonds are often used in Asian dishes such
as curries or stir fries.
Peanuts This can be found in biscuits, cakes, curries,
desserts and sauces such as for satay. It is also
found in groundnut oil and peanut flour.
Sesame
seeds
This can be found in bread, breadsticks, houmous,
sesame oil and tahini (sesame paste).
Soya
This can be found in beancurd, edamame beans,
miso paste, textured soya protein, soya flour or
tofu. It is often used in some desserts, ice cream,
meat products, sauces and vegetarian products.
Sulphur
dioxide
This is often used as a preservative in dried fruit,
meat dioxide products, soft drinks and vegetables
as well as in wine and beer.
Allergens
Please contact your Ward team or Catering Department for more specific
information regarding your menu choices and related allergies.
Allergens may be present following accidental contact. If you require food Free
from the 14 food allergens on the regulatory list (identified by the Food Standards
Agency); then please order your meal from the Allergy Aware menu.
Our allergy aware menu is suitable for patients requiring a vegan or gluten free
diet.
Please contact your Ward team or the Catering Department for more specific
information regarding your menu choices and related allergies.
The labelling on pre-packaged foods will identify if any of those are intentionally
used as an ingredient.

We offer a large number of menus and meal choices to ensure we are able to provide
the appropriate diet for your dietary needs.
Standard Hospital Menu - (Purple Colour)
Are you Eating from the Right Menu?
Enables patients to order freshly prepared meals produced on
site by our team of chefs. This menus is traditional in concept,
with soup to start, mains includes roast dinners and pasta
dishes as well as lighter bites with a choice of sandwiches and
jacket potatoes, followed by a choice of desserts.
We have 4 seasonal standard hospital menus and each menu
repeats itself after 14 days. The standard hospital menu caters
for vegetarians, soft food choices, options for patients with
diabetes and energy dense portions for the smaller appetite.
Different portion sizes can also be ordered (Small, Medium or
Large)
Neutropenic Menu - (Pink Colour)
This menu is designed for immune compromised patients,
whilst still enabling patients with a weakened immune system
to order freshly prepared meals produced on site by our team
of chefs. This menus is traditional in concept with soup to
start, mains includes roast dinners and pasta dishes as well as
lighter bites with a choice of sandwiches and jacket potatoes,
followed by a choice of desserts.
We have 4 seasonal Neutropenic menus and each menu
repeats itself after 14 days. The Neutropenic hospital menu
caters for vegetarians, soft food choices, options for patients
with diabetes, energy dense portions for the smaller appetite.
Different portion sizes can also be ordered from this menu.
(Small, Medium and Large)
Children’s Menus
(Seaside theme designed by one of our child patients)
In addition to the standard hospital menu choices we
have also included some children friendly options,
which the children will recognise and find familiar, so
encouraging them to eat whilst staying on the ward.
We have 4 seasonal children’s menus and each menu
repeats itself after 14 days. Different portion sizes can also
be ordered (Small, Medium or Large).
Children may order from either the standard hospital
menu or from the children’s menu.
Allergy Aware Menu (Green Colour)
Meals on our allergy aware menu are prepared
under strict conditions within a purpose built
kitchen to ensure that patients with allergies
can feel assured their dietary needs are met with
no risk of contamination. These meal choices
are free from gluten, crustations, wheat, eggs,
nuts, milk and soya.
A range of sandwiches and gluten free desserts
are also available as well as vegan choices.
Pureed Menu (C&D Texture Brown Colour)
& E Texture Menu (Blue Colour)
These menus may also be known as modified texture menu
or dysphagic menu.
These menus maybe required for our patients whilst they
are experiencing difficulties with chewing and swallowing.
We offer 3 different types of texture linked to the national
descriptors.
D Texture – Blended to a pre mash consistency.
E Texture – Food that is soft and fork mashable.
These meals are produced to ensure that patients
with chewing swallowing difficulties are catered
for with the correct consistency of food and a full
range of options can be offered.
Breakfast Menu (Yellow Colour)
A range of all your traditional breakfast choices are on offer. We
cater for both hot and cold choices and included in this menu are
pureed choices and gluten free options.
Finger Food Menu
(Orange Colour)
Children, patients with dementia and the elderly can
sometimes struggle with using a knife and fork. A finger
food menu has been designed to enable our patients to eat
with independence. A full range of options are available
for all dietary needs with both hot and cold choices and
dessert options.
Kosher and Halal Meals
(no printed menu but range of options available)
A range of kosher and halal meals are available upon request. Please ask a member of
the ward team to contact the catering department.
Kosher Meals
Our kosher meals are produced under the supervision of specialists of kosher laws
who are sometimes rabbis.
Halal
Our Halal meals are prepared in accordance with Muslim principles and techniques.
