Revisiting Cheap Talk with New Evidence from a Field Experiment

We assess the reduction of hypothetical bias in consumers’ willingness to pay (WTP) for products by applying a generic, short,
and neutral cheap talk script in a retail setting. Using an open-ended elicitation mechanism with non-hypothetical, hypothetical,
and hypothetical with cheap talk treatments, our results indicate that the hypothetical WTP values are higher than the
nonhypothetical values, but the hypothetical with cheap talk values are not significantly different from non-hypothetical estimates.

This study illustrates the differences in empirical results due to data measurements and estimating procedures when applying the
single index market model in agriculture. Gross and net return betas along with systematic and unsystematic risk proportions are
estimated and found to be different. The stochastic coefficients model is used to show the difference in beta-risk estimates
compared with the traditional fixed coefficients OLS procedure. A third estimating technique, weighted least squares/Prais
Winsten method, is also proposed.

Consumption of Home-Delivered Foods: Results from an Exploratory Survey

This study examines the effect of various factors on the decision to consume home-delivered foods. The results of the study
suggest that the decision to order food for home delivery is determined by gender, price consciousness, number of adults and
children in the household, employment status, education level, ownership of microwave oven and, to some extent race, age and
income. Specifically, the results suggest that less price-conscious, employed, higher-educated, white males within the 25-34 age
group, in a household with a microwave oven, with smaller number of adults, but with children are more likely to purchase
home-delivered food that others.

U.S. Consumers' Willingness to Pay for Labeling Information on Genetically Modified Foods: An

This study analyzes U.S. consumers' valuation of five types of genetically modified food labels on a cornflakes cereal product.
Using a nationwide survey and choice-modeling framework, results indicate that consumers value the label "contains no
genetically modified corn" the most with a mean willingness to pay of 20 more cents, followed by "USDA approved genetically
modified corn" with a mean willingness to pay of 9 more cents, and "corn genetically modified to reduce pesticide residues in

This study examines the factors that influence consumers’ perceptions or beliefs about food labels. The results indicate that
health and diet related attitudes, special diet status, perceived importance of product attributes like nutrition and ease of
preparation, race, gender, income, and body mass index are important factors affecting consumers’ perceptions and beliefs about
label use. Understanding the type of consumers who have these perceptions and beliefs as well as the factors that influence these
beliefs and perceptions is crucial for designing effective marketing and nutrition education campaigns.

THE IMPACT OF HACCP ON COSTS AND PRODUCT EXIT

Detailed information on firm level food safety costs is reported. Survey data for small and very small meat processors are
modeled. Economies of scale in implementing Hazard Analysis Critical Control Point (HACCP) systems are investigated.
Results indicate that even after controlling for scale, ver small plants incur higher compliance costs. Diseconomies of scope are
assessed using the probability and number of products discontinued due to HACCP. Such "partial exit" is positively related to
the current range of items produced and the need for facility modification. However, no evidence is found for higher levels of
partial exit in very small plants.

This paper aims to explore the socio-economic profiles of the nutrition label users and focuses on seven key nutrients: calories,
calories from fat, total fat, trans fat, saturated fat, cholesterol, and sodium. The data are from National Health and Nutrition
Examination Survey (NHANES) 2005-2006 and Continuing Survey of Food Intakes by Individuals (CSFII) 1994-96. Similar
conclusions are drawn from both data sets: those consumers who are older, better educated, higher income, female, and have
higher nutrition knowledge will have higher probability to use nutrition labels; those consumers who are in larger size families
and being either Hispanic or black have lower probability of using nutrition labels.

A logit model was developed to investigate the decision to eat lamb away from home in the United States. Using data from the
United States Department of Agriculture's 1987-88 National Food Consumption Survey, this study identified several
socio-demographic and economic characteristics of consumers who have eaten lamb away from home. The information derived
from this study is useful for lamb processors and producers in Australia and New Zealand who wish to anticipate future market
changes and derived demands for their products in the United States.

The relationship between nutrition knowledge and consumers’ food behavior has been debated for years. This may be partially
attributed to the difficulty introduce by endogeneity of nutrition knowledge in econometric modeling. Using grass-fed beef as a
vehicle, this paper investigates the impacts of consumers’ nutrition knowledge on their willingness to pay by accommodating the
endogeneity problem using instrumental variable approach. Our results suggest that consumers’ nutrition knowledge significantly
influences their willingness to pay for grass-fed beef. Gender and education are influential factors of consumers’ nutrition
knowledge level.

The Effect of Food-Away-from-Home and Food-at-Home Expenditures on Obesity Rates: A

Using state-level data from the Behavioral Risk Factor Surveillance System, we investigate the effects of household
food-away-from-home and food-at-home expenditures on overweight rates, obesity rates, and combined rates. Our random effects
model estimates suggest that food-away-from-home expenditures are positively related to obesity and combined rates, while
food-at-home expenditures are negatively related to obesity and combined rates. However, the magnitudes of these effects, while
statistically significant, are relatively small. Both food-at-home and food-away-from-home expenditures do not significantly
influence overweight rates.

The effects of socioeconomic and demographic factors on the consumption of food energy, protein, vitamin A, vitamin C,
thiamin, riboflavin, niacin, calcium, phosphorus, and iron are examined. Socioeconomic and demographic factors analyzed are
urbanization, region, race, ethnicity, sex, employment status, food stamp participation, household size, weight, height, age, and
income. Several of these factors significantly affect consumption of certain nutrients. Income is an important factor affecting
the consumption of vitamin A, vitamin C, and calcium. Income elasticities are relatively small at low income levels. For
example, income elasticities range from 0.016 for calcium to 0.123 for vitamin C at an income level of $20,000.

Small smoked and processed meat manufacturers constitute a unique cottage industry in Texas. This paper assesses ways for such
firms to improve their financial performance through better marketing strategies. The results indicate that, on average, small firms
tend to be the most profitable. This is true whether size is measured in terms of dollars, pounds, or number of employees. The
more profitable firms tend to be those that are located in rural areas or in shopping centers; those that make the majority of their
sales at their own stores; those that do less of their own distribution; and those that emphasize fresh meat sales and de-emphasize
jerky sales.

The aim of this paper is to determine Korean consumers’ valuation for domestic rice and imported rice from China and the US.
Using revealed preference data from random nth price auction mechanism, our results generally suggest that consumers’
willingness to pay (WTP) for domestic rice is higher than the WTP for imported rice. Results also suggest that while country of
origin and food miles information positively influences consumers’ WTP for domestic rice, country of origin information provides

Enterobacter sakazakii, a pathogen that can be found in powdered infant milk formula, can cause adverse health effects on infants.
Using Vickrey auction, this study examines parents' willingness to pay (WTP) for a quality assurance label on powdered infant
milk formula. The influence of ambiguity with the incidence rate information and provision of safe-handling information on WTP

This study evaluates the economic feasibility of establishing a packing house for the New Jersey Tomato Council Cooperative
Association. Several scenarios were evaluated using a comprehensive firm-level, dynamic, stochastic, multiple-year,
capital-budgeting computer model. Results indicate that the packing house would have difficulty sustaining itself if it packed
tomatoes only during the three months a year that local tomatoes are produced. Economic performance of the packing house
improved, however, when additional tomatoes were repacked from another supplier during the months that tomatoes are not
produced in New Jersey.

The demand for food away from home, food at home, and non-food items is investigated using a complete systems approach.
Using the linear approximation of the dynamic version of the Almost Ideal Demand System, the results indicate that the share of
total expenditure going to food away from home increases as the labor force participation rate of women increases. All
expenditure elasticities are positive and all own-price elasticities are negative. Moreover, the demand for food away from home is
more price sensitive than the demand for food at home. Seasonal patterns of consumption are also evident.

In this paper two types of experimental auctions (endowment and full bidding) are used to elicit consumer preferences towards
different labels providing information on animal welfare practices. The three types of labeling schemes evaluated are the
comprehensive “animal welfare label”, the “good animal housing”, and the “good human-animal relation and transport
conditions”. Our results suggest that there are no statistically significant differences in the elicited values across labelling
schemes. However, there are clear differences across auction types. Bids elicited from auctions in which participants were

We report the result of experiments designed to assess the effect of initial endowments on willingness to pay values elicited from
multi-unit Vickrey auctions. Comparing bids from an “endow and upgrade” approach with the “full bidding” approach, we find
that the direction of the endowment effect generally depends on the number of endowed units of the conventional product that

We analyze the inter-relationships between body weight outcomes and food expenditures among older Europeans using a
simultaneous equation model. Several statistical tests were conducted to assess endogeneity of selected variables, the exogeneity,
relevance, and validity of instruments used, and the identification of the model. Our results generally suggest, contrary to
normative views, that food-away-from-home expenditure is negatively related to body mass index (BMI). BMI is negatively
related to the percentage of food spent away from home.

This study analyzes U.S. consumers' choice of cornflakes under five different labeling statements. Using a nationwide survey and
choice modeling framework, results indicate that consumers value labeling statements differently, depending on the information
contained on the label. The random parameter logit model results indicated that, compared to cornflakes that have no label
information, cornflakes labeled "contains no genetically modified corn" have a value of 10 percent more, the label "USDA
approved genetically modified corn" has a value of 5 percent more, and the label "corn genetically modified to reduce pesticide

This article examines the impact of socio-demographic factors on individual consumption of alcohol in the United States using the
Heckman procedure and logit analysis. Factors considered are urbanization, race, ethnicity, region, weight, height, sex, food
stamp participation, employment status, diet status, day of consumption, household size, age, and income. All the variables, with
the exception of ethnicity and food stamp participation, significantly influence the decision to consume alcohol. Results also

We examine the role of peer effects in childhood obesity outcomes by investigating whether obesity rates among the highest
graders in a public school has an effect on obesity rates among younger grades. We use a panel dataset with obesity prevalence
measured at the grade level. Our data are from Arkansas public schools. Results provide evidence that changes in the obesity

benefit (input vs output trait) and product (plant based vs animal based). Two surveys were administered in two consecutive years

This study examines the impact of consumers'’ use of food labels on selected nutrient intakes of Americans. Endogenous
switching regression techniques are employed to control for heterogeneity in the label use decision. When the nutrient intakes of
label users and the expected nutrient intakes of label users in the absence of labels are compared, food label use decreases
individuals'’ average daily intakes of calories from total fat and saturated fat, cholesterol, and sodium by 6.90%, 2.10%, 67.60

Enterobacter sakazakii, a pathogen that can be found in powdered infant milk formula, can cause adverse health effects on infants.
Using Vickrey auction, this study examines parents' willingness to pay (WTP) for a quality assurance label on powdered infant
milk formula. The influence of ambiguity with the incidence rate information and provision of safe-handling information on WTP
are also evaluated using three experiments/treatments. The mean price premium parents are willing to pay for the safer and quality
assurance labelled powdered infant milk formula ranges from 61 to 133 Eurocents per 100 grams depending on the treatment.

This study examines the effects of a wife's participation in the labor force and other socioeconomic factors on family expenditures
for prepared food, food prepared at home, and food away from home using the Bureau of Labor Statistics 1992 consumer
expenditure survey. On the one hand, results indicate that the number of children, home ownership with mortgage, seasonality,
region, wife's age, and income are important determinants of expenditures on food prepared at home. A wife's education and
participation in the labor force, on the other hand, affect expenditures on prepared food and food away from home. The impact of
both these factors is greater on food away from home than on prepared food expenditures.

Willingness to pay for a local food label for lamb meat in Spain

The aim of the paper is to assess consumers’ willingness to pay (WTP) for a local food produced in a less-favoured area in the
Aragon region (Spain). In particular, we examine whether consumers value lamb meat products (lamb and suckling lamb) labelled
as “Ojinegra from Teruel”, traditionally produced in these area. We use a nonhypothetical experimental auction to elicit Spanish
consumers’ WTP for “Ojinegra from Teruel” labelled lamb products. Results show that consumers are willing to pay a positive
premium for a lamb and suckling lamb labelled as “Ojinegra from Teruel”.

Welfare Effects of Food Miles Labels

We assessed the consumer welfare effects of two generic food miles labels: carbon dioxide (CO2) emission label and number of
miles label. Using data from a choice experiment, our results generally suggest that a mandatory labeling policy for either type of
label would have a positive welfare effect on both informed and uninformed consumers. However, a label informing consumers
about the number of miles the food product has travelled provides greater positive welfare effects than a label informing
consumers about the amount of CO2 emission.

Household Fast Food Expenditures and Children's Television Viewing: Can They Really Significantly
Influence Children's Dietary Quality?

Previous studies have found a strong relationship between food-away-from-home expenditures and television viewing, and
children's diet. This study revisits this issue by examining the impact of household fast food expenditures and children's television
viewing on children's dietary quality. Results indicate that both factors have statistically significant and negative effects. However,
the elasticities of children's diet quality with respect to both factors are quite inelastic. Results also suggest that the effects of these
two factors differ between children younger than 11 years old and children at least 11 years old. Relevant policy implications are
discussed.

This study examines how sociodemographic characteristics of a household's main meal planner affect use of nutritional
information concerning ingredients, health benefits, calories, sodium, vitamins/minerals, fiber, fat, cholesterol, and sugar content
on food packages. Results generally suggest that well-educated, female main meal planners are more likely to use various types of
nutritional information than others. Main meal planners who place more importance on nutrition but less importance on taste and
those who have a higher perception of the healthfulness of their diet are more likely to use nutritional information on packages
than others. Household size, race, employment status, urbanization, region, age, and income are also significant factors.

This study identifies several characteristics and factors of individuals who are more likely to try low-fat, low-cholesterol foods.
The analysis was performed using logit analysis. The results imply that the following individuals are more likely to try low-fat,
low-cholesterol foods: those with high incomes, whites compared to blacks, females, those with smaller households, those with
high body mass index, those who have a better perception of their own health, those who are aware of the link between diet and
disease, nonsmokers, and those who do not agree that people are born fat or thin and that there is nothing one can do about it.

This study analyzes the interrelationship and volatility between grain and oil prices. Specifically, the objective of this study is to
investigate the volatility transmission mechanism of grain prices with oil prices, under the assumption that an increase in crude oil
prices not only affects corn and soybean prices but also other grain commodity prices such as wheat and rice. The results
presented in this paper suggest several conclusions. First, there is a short-run relationship between the grain market and oil prices,

This paper presents the problems facing food firms using information from focus groups of industry executives from New Jersey.
The leading problems for food manufacturers are related to regulation, taxation, economic development, and high business costs.
For food wholesalers the leading problems are transportation, regulation, labor quality, training and education, and public
relations. Food retailers cite litigation and liability, high business costs, regulation, and insurance costs as leading problems. For
food service firms, regulation, licensing and permits, labor quality and costs, and high business costs are the most pressing
problems. Policy recommendations for improving the business climate are provided.

Consumer spending at full-service and fast food restaurants will continue to grow over the remainder of this decade and the next.
However, the larger increase is predicted to occur at full-service restaurants. Simulations assuming modest growth in household

This essay investigates the impacts of primary care giver’s (PCG) time allocation and food expenditure choices on childhood
obesity using national panel study of income dynamic (PSID) data. A triangular system of equations is derived and estimated
under parametric and semi-parametric model settings. The performances of the two modeling strategies are compared using
predictive ability measures with the aid of bootstrap method. Test results suggest relatively better performance of the

We examine how people might evaluate a product with novel attribute, given various kinds of risk information. Using a product
with healthful benefits, we assess subjects'’ willingness to pay given various kinds of health risk information conveying reduced
health risks, life tradeoffs, and ambiguity. Four treatments in separate non-hypothetical experimental auctions are used to elicit

The role of health knowledge in consumer use of nutritional labels on food packages is explored using data from the 1995 Diet
and Health Knowledge Survey. Two types of label use models, a binary choice label use model and a level of label use model,
are employed with particular attention given to the endogeneity of health knowledge. The binary choice model is concerned with
factors affecting the probability of label use. The level of label use model deals with factors affecting the number of food

Food biotechnology promises to deliver a wide range of enhanced consumer benefits. This study models consumer's willingness
to trade-off the potential risks of GM foods with the possibility of extracting significant benefits. The results of the choice
modeling experiments reflect how different attributes of price, product benefits, and technology influence consumer demand for
genetically modified food products. The results suggest that direct health, environmental, and production related benefits have a
positive effect on choice. The results also generally show that genetic modification is viewed negatively, with use of bacterium
and animal based genetic modification being viewed more negatively than the use of plant based genetic modification.

Consumer Willingness to Pay for Irradiated Beef

This study examines consumer willingness to pay for irradiated beef products. About 58 percent of the respondents are willing to
pay a premium for irradiated beef. An ordered probit with sample selection model was estimated. Standard errors of the marginal
effects of the ordered probit model were estimated using the bootstrap method. Our findings suggest that females and those who
think that improper handling contributes to food poisoning are more likely to pay a premium of 50 cents per pound of irradiated
beef than others. Those who trust the irradiation technology are also more likely to pay a premium of between 5 to 25 cents per
pound for irradiated beef. Supply chain implications are discussed.

Food away from home is recognized as one of the reasons behind recent overweight and obesity surge. The relationship between
Body Mass Index and the distributional effects of food consumed at home and away from home at different levels of aggregation,
along with demographic profile covariates are modeled. Demographic variables have the expected effects on BMI established by
other studies. Food away from home has a significant positive effect on BMI. The effects of food away from home split into foods
at Full- and Quick-service restaurants also affect BMI in the predicted way, with the latter effect being disproportionately larger.
