Louisiana Farm to School Conference 2015 at Pennington Biomedical
Center
The purpose of the Louisiana Farm to School Conference was to educate
the public of the activities and awareness of farm to school statewide. We
gathered at the Pennington Biomedical Center to learn from one another,
strengthen partnerships and collectively plan for the future of farm to
school programs in Louisiana and statewide. Farm to school programs
help schools respond to the growing demand for locally sourced foods.
They also increase marketing opportunities for producers and food
businesses and support educational activities such as school gardens. We
learned about: Garden and Community Track, Child Nutrition/Producer
Track, Starting and Sustaining a School Gardner/Parents and Community
Engagement and Connecting Curricula with Gardens. It was a very
interesting conference and a lot was learned by everyone.
Creole Farmer’s Market
The Creole Farmer’s Market is opened every Saturday from 9:00 – 3:00
p.m. There are several local vendors (13 vendors to date) selling their
fruits and vegetables and other hot items at a great price and it’s locally
grown. Why not make an effort to attend one Saturday and I know that
you won’t be disappointed. I will be doing demonstrations and presenting
healthy information on some Saturdays. Please come out and say hello to
me.

WOW! Summer has finally come and it is hot. Time to have BBQ’s, swim
parties, beach parties and all sorts of parties. Because of the outside parties
that will be given this summer, we need to take into consideration
foodborne illnesses that will be lurking around and trying to get people
sick, especially children and elderly. Remember that bacterial grows faster
in foods that are at a warmer then usually temperature when outside.
Listeria monocytogenes is a very dangerous bacteria that grows year round
especially during the summer months. This bacteria grows at refrigerator
temperature and is very deadly for pregnant mothers, unborn babies and
newborns, in fact, they are 10 times more likely to become infected with
the bacteria.
Listeria is found in foods such as:
 Cheeses that are soft and ripened (examples: Mexican-style, Brie,
Feta, and Ricotta)
 Vegetables that are raw
 Pre-bagged salads with ham, chicken, tuna and seafood
 Meats from the deli
 Hot dogs
Hot dogs are a favorite at every BBQ party, however, that is why it is
extremely important to make sure that:
 Hot dogs are never eaten straight from the package but heated to
165 degrees F
 Hands are washed before and after handling the pack of hot dogs
 Drain hot dog juices in sink so that it does not get on other foods or
eating utensils
 Keep grilled hot dogs temperature at 140 degrees F or above until
eaten
 Leftovers should be refrigerated or placed on ice at least two hours
after removed from grill or one hour if temperature is 90 degrees F.
When reheating hot dogs, always heat to 165 degrees F or above
 Leftover should be eaten within four days, after four days throw
away
Following these instructions will keep these dangerous and deadly bacteria
from crashing your party and making people sick.
Healthy Recipe
Watermelon Ice Pops
Ingredients:
2 ½ cups seeded diced watermelon
½ cup fresh strawberries
2 Tablespoons sugar, honey or agave syrup
1 Tablespoon fresh lemon juice
Instructions:
Combine all ingredients in blender; puree until smooth. Pour puree into
Popsicle molds, dividing equally. Freeze several hours, or overnight.
Healthy Home Solutions Training
I attended the Healthy Home Solutions Training with focused on Good
Health Starts at Home. We learned about the Indoor Air Quality; Radon;
Asthma/Allergies; Mold & Moisture; Carbon Monoxide; Lead;
Drinking/Waste Water; Home Safety; Hazardous Products; Pest
Management; Home Energy; Home Assessment; Action Plan &
Marketing; Evaluation and Resources. There was also a lesson on bed
bugs, which seems to be common in hotels. I will be conducting some of
these workshops in the future to educate the community on Healthy Home
Solutions in St. John the Baptist Parish. There are a lot of things that we
are not aware of or that we take for granted. Watch out for the upcoming
workshops.
