Dearest Reader,
How blessed we are to live in this age. Humanity has progressed
through the time of the hunter-gatherer to the agricultural
revolution, and still further through the industrial era and the
technological advancements of the present day. Reflecting on the
world we live in, I am continually amazed by the awesome power of human
potential. We are beings with the ability to be or achieve anything we wish. We have
the air, water, land, and intelligence. We can learn, create or manifest almost
anything we imagine.
This power is not unique to certain individuals; it is present in everyone. Why, then,
doesn't everyone reach his or her fullest potential? Many of us have beliefs and
internal agreements that keep us from realizing our power-some of these we learned
consciously, and others influence us without our direct knowledge. We are subjected
to judgment, criticism, and we make agreements that these environmental influences
are true. They become beliefs to us, and we hold them tightly. We could be born in
an environment that believes if you don’t pray a certain way, the prayers won’t be
heard. We could be born in an environment that believes some races are better than
others, or one that holds an agreement that women aren't able to accomplish as
much as men. Don Miguel Ruiz writes about this idea very eloquently in his book
The Four Agreements. Once we identify the agreements we’ve made, we can begin to
decide which are truly ours, and which ones we can reject. We can make new
agreements to lead us toward lives of beauty and fulfillment-consider these from
Stephen Covey: For the body ~ assume you’ve had a heart attack: now live accordingly.
For the mind ~ assume the half-life of your profession is two years: now prepare
accordingly. For the heart ~ assume everything you say about another, they can overhear:
now speak accordingly. For the spirit ~ assume you have a one-on-one visit with your
Creator every quarter: now live accordingly.
Health advocates often say we are what we eat, but I would like to offer that we are
our words and actions, which reflect our internal agreements and deepest beliefs. You
can use your thoughts and words to create an infinite abundance of all you ever
imagined in life. Remember that the infinite reserve of your potential can manifest
your thoughts and feelings, both positively and negatively. Just as you are able to
achieve anything you believe you can, you are also able to hinder your own
achievement if you believe you can’t.

“It is chronic dehydration that causes
the pains and degenerative diseases of
the human body.” With these words,
Dr. Fereydoon Batmanghelidj, M.D. Dr. Batman for short - changed the face
of alternative medicine. Like Dr.
Semmelweis and other free thinkers
that came before him, Dr. Batman
faced a great deal of criticism in his
lifetime for what many thought were
radical ideas about healthcare. Strong
in his convictions, Dr. Batman devoted
his life to the study of the link between
dehydration and disease. He practiced
medicine in The United Kingdom
before returning to Iran where he was
instrumental in the development of
hospitals and medical centers. He also
established a number of sport projects
for the advancement of youth in the
country, including the construction
and management of the first ice skating
and sports complex in the Middle East.
After the Iranian Revolution in 1979
Dr. Batmanghelidj was placed in the
infamous Evin Prison as a political
prisoner for two years and seven
months. With limited access to
conventional medication, he discovered
the healing powers of water while
treating more than 3,000 fellow
prisoners who suffered from peptic
ulcer. He considered this environment
as an “ideal stress laboratory” and
began extensive research into the
medicinal effects of water. Dr.
Batmanghelidj discovered that a careful
regimen of water drinking could
prevent, relieve and even cure many
painful degenerative diseases that are
today treated with drugs.
After his release from prison in 1982,
and a harrowing escape over the
mountains
into
Turkey,
Dr.
Batmanghelidj went to America. At the
University of Pennsylvania, he
immediately continued his research
into the role of water metabolism in the
human body, and the damaging effects
of dehydration on human health. He
published and lectured extensively, and
presented scientific papers at US and
International conferences. He spent the
last 20 years researching the natural
healing power of water and
contribution
of
unintentional
dehydration as a cause of many
degenerative diseases. His ground
breaking book, Your Body’s Many
Cries for Water, has been translated
into fifteen languages and has sold over
a million copies.
In November of 2004, Dr. Batman
died unexpectedly of complications
from pneumonia after a trip abroad.
He was 73. The thousands of people
that he helped and the legacy he
inspired is reflective of the innovative
spirit with which he lived his life.

Work has surprising rewards. In fact, it
was through work that I met Selina
Delangre. We connected on a business
level concerning the sales and
promotion of goods that promote wellbeing, and particularly with products
that
provide
global
business
opportunities for all.
We both attended the Weston A. Price
Foundation
conference
near
Washington DC in 2003. After the
conference, a group of us piled into cabs
and went to a lively restaurant filled
with piano and song. Jordan Rubin was
there, among nearly a dozen folks
sharing dinner at one table. He had
completely recovered from a serious case
of Crohn’s disease and was powerfully
sharing his healing method. I had heard
that he essentially made a pledge to
never get ‘old’. I think what he meant by
that is that he never wanted to be worn
out by his own design, and if anyone
were to “never grow old”, he appeared to
have the bright confidence and
determination to do it. Selina and I sat
next to each other and shared stories and
ideas about natural food and healthy
living.
The next day, as we were all leaving for
the airport, Selina commented on the
chilly spring air. I happened to have a jar
of raw shea butter in my bag. I
mentioned it to Selina because I had just
heard that if someone suffered from

which was challenging for me since I had previously been
pretty much a “company guy”, towing the line and marching
in step.
This was an incredible turning point in my career. At that
moment, I realized that the vast majority of doctors don’t care
about hypnosis or any other potentially-useful treatments
outside the current “standard of care,” even in the face of great
data. They are locked into a “paradigm box,” only able to
consider those options taught to them in the paradigm of
their training, which focused on surgery and medications. I
hear them use phrases such as “There’s no evidence to support
that treatment," when in fact there’s overwhelming evidence,
but they’ve either ignored it or refused to look at it. Therefore,
I created a saying to help me understand the reactions I
encountered, and still encounter, from conventional
physicians: “All data will be ignored if it does not fit the ruling
paradigm.”
Since then, I’ve learned that advances in science, and
especially medicine, unfortunately tend to occur more as
revolutions than as evolutions. As outlined in the book The
Structure of Scientific Revolutions, new ideas are first ignored,
then ridiculed, then persecuted, and then finally accepted as
obvious, and as if they were the establishment’s own all along.

derived from the two greek words
"allos" (meaning opposite) and "pathos"
(meaning suffering). The term is most
often used by critics of conventional
medicine, who claim that it bases
treatment on masking symptoms rather
than focusing on the underlying cause of
disease.
ALTERNATIVE MEDICINE a ‘catch-all’
phrase used to refer to any medical
systems that fall outside of the
conventional paradigm. Alternative
medicine is used in place of
conventional medicine. An example of
an alternative therapy is using a special
diet to treat cancer instead of
undergoing surgery, radiation, or
chemotherapy
that
has
been
recommended by a conventional
doctor.

help a patient, rather than in how most other doctors would
treat that patient. This has, unintentionally, led me into a
field sometimes known as “Alternative Medicine.” I prefer the
terminology of “Integrative Medicine,” because I desire to
integrate whatever really works.
In my practice, our basic philosophy is centered around
maximizing vitality and improving the quality of life of our
patients. The approach of integrative medicine is to discover
the deeper causes of symptoms, illness, and disease. We
investigate and identify the fundamental deviations from
nature's template that have separated each individual client
from his or her own optimal health. Our experience has
shown remarkable success in achieving significant
improvements in the quality of life for our patients, even for
those who have failed to respond to other conventional or
alternative approaches. Using basic, powerful, safe,
innovative, and often natural techniques to improve
metabolism, we see a majority of our patients reverse their
diabetes, heart disease, obesity, fatigue, arthritis, and other
chronic illnesses. I encourage you to find integrative medical
professionals wherever you call home.
In my home state of North Carolina, we are extremely

attempts to change the law and restrict the
options of both doctors and patients. This
is an example of why I encourage my
patients to stay informed at both the local
and national level, and perhaps even join
one of the organizations fighting to
preserve and expand medical freedoms. As
you may have heard, the price of freedom
is everlasting vigilance.
Integrative medicine has tremendous
potential to revolutionize the way people
think about the treatment of disease.
Dr. Andrew Weil, a visionary in the field of
integrative medicine, grew up learning about
herbal medicine from his mother. While in
medical school, he expected to learn more
about the tremendous healing power of
natural therapies, and became frustrated
when no such information came. His
experience highlights a critical problem in
standard medical training-doctors aren't
exposed to treatments that fall outside of
the conventional paradigm.
In 1994, Dr. Weil founded the first
comprehensive program in Integrative
Medicine at The University of Arizona.
Practitioners who enroll in the program are
taught the basic principles of integrative
medicine, a philosophy that neither rejects
conventional medicine nor accepts
alternative medicine uncritically. They are
trained to consider all of the factors that
influence health, wellness & disease, including
mind, spirit & community. The program has
also created a fellowship that trains
physicians, who will later initiate Integrative
Medicine curriculums at other institutions.

On August 13, 1865, 47-year-old Dr. Ignaz
Semmelweis died what can only be
described as a horrible, lonely death. Most of
his colleagues in medicine declined to attend

His struggle began when, on his 28th birthday, he became an assistant to Dr.
Johannes Klein, the head of the Viennese General Hospital’s maternity clinic.
Semmelweis, who held a medical degree from the University of Vienna as well as
a master’s degree in midwifery, was appalled at the mortality rate in the clinic. At
one point in the clinic's shameful history, 11 of 12 maternity patients perished
from what was then called “childbed fever.” Unsatisfied with any of the current
explanations for the cause of childbed fever, Semmelweis began investigating the
deadly disease on his own. His research brought him to the conclusion that the
disease was caused primarily by decaying particles of flesh carried on the hands of
the physicians attending the doomed patients. In those days, it was standard
procedure for a doctor to go directly from the dissection of a cadaver to an
examination of a live patient. Semmelweis developed a chloride of lime solution
and insisted that the physicians in his section wash with it thoroughly before
working on a live patient. The mortality rate in his section dropped to almost zero.
Rather than embracing Semmelweis’ solution, many doctors actively tried to
discredit him. One prominent physician published a condemnation of chlorine
washing, arguing that the amount of infective material around a fingernail would
not possibly be enough to kill a person. Even though his findings were grossly
misinterpreted by the medical establishment and rejected by many prominent
physicians, Semmelweis continued to achieve dramatic success in surgical
procedures considered extremely dangerous by even the most skilled of his
contemporaries.
In 1856, the editor of a Viennese medical journal added the following words to
the end of an otherwise favorable report on chlorine washing by one of
Semmelweis’s assistants: “We believe that this chlorine washing theory has long
outlived its usefulness. It is time we are no longer to be deceived by this theory.”
Eventually, embittered by his rejections and full of despair over the lives lost to
childbed fever, Semmelweis began to deteriorate. He started drinking heavily and
spending time in the company of prostitutes. He published angry open letters
denouncing prominent obstetricians as irresponsible murderers.
An embarrassment to his colleagues and his family, Semmelweis was lured by a
friend to the insane asylum and held there against his will. When he discovered
that he was being committed to the asylum he attempted to escape, got in a fight
with the guards, and received the beating from which he would die two weeks
later. Ironically, the disease that killed him-blood poisoning-was one of the
maladies that had ended so many lives in the Viennese maternity ward where his
struggles had begun.
As disturbing as the Semmelweis story is, the appalling truth is that on a
fundamental level little has changed for the better in the medical establishment.
Certainly, surgical hygiene has improved greatly and the technology of medicine
has developed at an astonishing rate. But what about the attitude of medicine?
What about our objectivity and our ability to embrace new ideas? Are physicians
today any more willing to admit error than they were in the days of Ignaz
Semmelweis?

It is only recently that health practitioners have come to
realize the dangers associated with trans-fat. One problem is
that it is difficult for the body to process. It seems that
enzymes responsible for digestion cannot break down transfat, although the body devotes many reserves to
accomplishing this task. Enzymes become tied up in trying to
digest trans-fat, and are not available to synthesize other,
more valuable essential fatty acids. According to the Harvard
School of Public Health, consumption of trans-fatty acids
double the risk of heath attack, increases the risk of diabetes,
and is responsible for the deaths of 30,000 Americans
annually. Trans-fatty acids tend to raise total blood cholesterol
and LDL (the bad cholesterol) and lower HDL cholesterol.
Studies referenced by Udo Erasmus, author of Fats that
Heal, Fats that Kill, indicate that trans fats not only cause
heart disease, they also interfere with vision in children,
inhibit cerebral cortex function (lower intelligence), interfere
with liver detoxification, make platelets more sticky, correlate
with increased prostate and breast cancers, interfere with
insulin function, and complicate reproduction in animals.
They also could interfere with the beneficial functions of
good fats.
Knowing that not all fats are equal and where bad fats are
found is the first step to understanding food choices. Transfats are found in margarine, vegetable shortening, most
packaged baked goods, cereals and snacks. If you see the
words "partially hydrogenated vegetable oils" on the
ingredient listing of a food label, that product contains transfat. Recently, in the wake of several lawsuits, the FDA issued
a final rule that mandates trans fat must be listed on labels,
just as saturated fat and other nutritional components are.
However, this rule will not be fully implemented until 2006.
In the meantime, many manufacturers have taken the
initiative to begin labeling now, in the interest of influencing
consumers toward healthier options. Keep in mind that the
FDA rule doesn't account for all exposure to trans-fat.
Restaurant cooking oils will still represent a significant
source, and the consumer is typically is not aware of the kind
of oil their food is being cooked in. Be mindful of the choices
you make at restaurants, and don't be afraid to ask what type
of oil the kitchen is using.
Hopefully, this article has given some thought-provoking
insight into the dangers associated with trans-fat. As the
future of trans-fats in the consumer marketplace unfolds, we

butter. It was a wild-card, not knowing
whether it was true or not, I was
curious to find out more. I tossed the
jar to Selina in the lobby of the hotel.
“Check it out, maybe there is some
connection!”
By the time we were half-way home,
in different airports, going to different
places, we had a long cell phone
conversation. The shea had warmed
Selina right up, and she was curious to
find out more about it. Shea was a new
passion of mine and I was excited to
share the story with her. We talked
about the fact that the African women
that have harvested this shea butter for
centuries are wholesome people, known
for their robust health. They use shea to
care for their families and societies.
Shea is a mainstay both in their diet
and as a topical application. The
women’s associations that make this
shea decide collectively in groups how
best to use the funds to improve their
society. In one phone call, as those
things go, we were committed to
researching the potentially healing
properties of the shea as well as the
global business possibilities with the
women in Africa. We wanted to work
together in a way that is the definition
of well-being: the state of being healthy,
happy, or prosperous.
In many instances, those who are
passionate about pursuing a healthier
lifestyle are faced with the challenge of
finding the science to validate the
positive experiences they have with a
natural product. The shea is a good
example of this-when I am chilly but
others are not, I use the shea butter.
This has worked for me, for Selina, and
others I’ve shared it with, but I cannot
say definitively what gives the shea this
property. Although I am not a doctor (I
am a biochemist by trade), I feel it may
have something to do with shea acting
on the thyroid.
The thyroid gland acts as the body’s
thermostat, regulating the body’s
temperature. In fact, it controls the rate
of function of every cell and gland of
the body, including growth, repair, and
metabolism. The proper functioning of
the thyroid is dependant on iodine,
which is an important key to our wellbeing.
What I have understood so far is that
shea applied on the throat and on the
bottom of the feet could make a chilly
person feel warmer, mainly because
there are trace elements of iodine left
from the shea nut, in the shea butter,
which are absorbed into the
bloodstream. It may sound strange to
hear that applying shea to the bottom
of the feet could be beneficial! The
pores in the feet are 30-40% larger than
other pores of the body, so anything
applied to the feet is readily absorbed
into the whole body. Combining shea
butter with Celtic Sea Salt® creates a
unique synergistic effect-the Celtic Sea
Salt® scrubs away the dead cells on the
bottom of the feet and allows the
abundant minerals, vitamins and
nutrients to be absorbed. Pure shea
balm applied to the throat could
directly affect the thyroid, which is

apple. Iodine is absorbed into the

thyroid gland. The thyroid gland

absolutely necessary for synthesis of
thyroid hormones. Thyroid hormone is
biologically available to the body only
when it has iodine. An adequate
amount of iodine is absolutely
necessary for the thyroid gland to
produce thyroid hormone.
I have only observed this effect in the
highest quality shea. It is important
that the shea is not “cut” with other
oils. The shea that I shared with Selina
that day in Chicago is defined by a high
level of quality control, and by its
superior biochemical make-up: with a
high percent of allantoids, a high level
of the special form of vitamin A (also
called retinol), vitamin E, and other
valuable nutrients required for healing.
This is the same shea that is used in

growing interest in natural foods and
medicines, we are likely to learn more
about the undiscovered benefits of

Eat breakfast It seems counterintuitive that skipping a meal would result in weight
gain, but many studies have proven that skipping breakfast is related to obesity in children
and adults. Many nutritionists say that breakfast is the only meal of the day that people
should eat even when they’re not hungry. A study published in the February 2005 issue of
The American Journal of Clinical Nutrition found that those who regularly eat breakfast
had a lower incidence of weight gain and heart disease than those who didn’t. Perhaps those
who eat breakfast are less likely to overeat at lunch or dinner. It may also be that foregoing
breakfast in the morning results in rampant snacking during the day.

“Grazing”, the idea of eating
many small meals and snacks
throughout the day rather than
a few large meals, is a topic that
is very much in vogue these
days. Many health practitioners
say that grazing is a good way to
stay in tune with your bodyeating only when you’re hungry,
and avoiding the tendency to
overeat, may offer significant
health benefits and result in
weight loss. After being told for
most of their lives that snacking
will make them fat, many
people are surprised to hear
health professionals advocating
grazing. The popularity of this
new trend reflects the idea that
it isn’t snacking in and of itself
that is unhealthy-snacking can
have a place in a healthy diet
regimen, if you remember to
consider a few key points.
Sleep Researchers at Stanford University and at The University of Chicago reported in
2004 that sleep loss may be related to weight gain. The reason? It appears that as few as two
nights of poor sleep increases production of a hormone that caused study participants to
crave more simple carbohydrates and other unhealthy snack foods. Additionally, the study
authors cited that those who stay up late are more likely to snack at night. On average, the
study found that those who regularly enjoyed adequate sleep (8-10 hours) were not as heavy
as those who did not get adequate sleep.
Be Prepared Just as you would plan breakfast, lunch or dinner, also plan your snacks.
When you leave for work in the morning, take a ‘snack pack’ filled with healthy, nutritious
options. Fruits and raw vegetables are always a good choice. Try to avoid high-sugar options
or snacks high in refined salt and fat. Also, cultured vegetables are a healthy snack that
actually curb your cravings for sweets.
Write it down Journaling what you eat each day can help you keep track of patterns and
identify times when you experience snack cravings. Several websites offer free online fitness
and diet journals that make recording and keeping track of daily choices easy-one such
example is www.fitday.com.
Above all, listen to your body. Snacking isn’t a bad thing if you really need a boost, but there
are often other reasons why people reach for a snack. Are you really hungry, or are you just
bored? Are there emotional reasons responsible for your snacking choices? If you find
yourself eating for reasons other than hunger, it’s important to identify the underlying
reasons behind these cravings if you are to overcome them. Instead of succumbing, take a
walk, call a friend, or do something that makes you happy.
Our mental and emotional diets determine our overall energy levels, health and well-being more

Recipe Renovation! In this
section of A Grain of Salt©,
we convert well-loved recipes sent in
by our readers to healthier, more
wholesome creations.We’re happy to
report that this has been a very
popular idea among our members,
and we’ve gotten several submissions
already. We can only choose one
recipe per issue, but please, keep
those recipes coming!
This issue’s winner was Sara Zignego
of Wisconsin. Sara & her mother are
both members of The Grain & Salt
Society® who love to bake, but
struggle with understanding how to
substitute for the unhealthy sugars
and fats that many recipes include.
She sent us a recipe for Oatmeal
Cinnamon Drops, a favorite cookie in
her family.
“My aunt is well-known for her
delicious oatmeal cookies. It would be
nice if there was a way to make these
with healthier ingredients and yet
keep them so yummy,” writes Sara.
Here are the original ingredients:
1 cup margarine
½ tsp salt
1 ½ tsp baking
soda
2 cups sugar
1 TBL molasses
2 tsp vanilla
1 cup raisins
1 cup chocolate
chips
2 eggs
2 cups oatmeal
2 tsp cinnamon
2 ¼ cups flour
For this recipe, we called in the help of Sabrina
Marie, a local writer, natural foods chef, and
culinary instructor. Sabrina was quick to point out
that deserts are best enjoyed sparingly, but getting
creative in the kitchen can go a long way to
making deserts healthier. For example, reheating a
fruit spread with a little water can make a delicious
sauce to use on cakes instead of frosting. She also
had some excellent helpful tips for Sara’s recipe.
“Most cookie recipes can have sugar decreased by
25% or more,”Sabrina said. “Consider decreasing
chocolate by half and adding nuts. As a mom, I
pack in the extras. I would probably add coconut
flakes and possibly chia seeds (soaked in water
first), simply for the added nutritional benefit.”
We eliminated the white sugar from this recipe,
instead opting for a small amount of rapadura
sugar combined with agave nectar. Agave has a
rich, sweet flavor reminiscent of molasses.
The original recipe called for margarine, which we
replaced with good old-fashioned butter. Most
margarine products are hydrogenated, which
means that they have been chemically altered to
increase shelf life and improve flavor.
Hydrogenated oils contain trans-fatty acids,
which, according to the FDA and countless
medical studies, has been shown to raise LDL
(bad) cholesterol and increase the risk of coronary
artery disease. Butter is a more nutritious choice,
and it tastes better, too!
We chose whole-wheat pastry flour for a light,
fluffy texture, and because it still retains the
nutrients & minerals found in the bran and germ
of the wheat. We used Celtic Sea Salt® for a
superior flavor, a higher mineral content, and
because it doesn’t contain bleaching agents, anticaking ingredients, or other synthetic additives. As
always, we chose organic ingredients whenever
possible, and used DHA eggs for their superior
nutritional profile.
Sara’s NEW & IMPROVED Oatmeal Cinnamon Drops
¾ cup softened organic butter
¹/³ cup agave nectar
¹/³ cup rapadura sugar
1 DHA egg
½ tsp real vanilla extract
1¼ cup organic whole wheat pastry flour
1 tsp Celtic Sea Salt®
¾ tsp aluminum-free baking soda
1 tsp organic cinnamon
1 cup organic oatmeal
½ cup organic walnuts
½ cup grain-sweetened chocolate chips
½ cup organic raisins
½ cup unsweetened coconut flakes
1 tsp organic chia seeds (soaked in 2 tsp water)
DIRECTIONS: Preheat oven to 350 degrees. Cream butter, rapadura sugar, and agave
nectar in a large bowl. Add egg, chia seeds & vanilla. In a separate bowl, sift together
flour, baking soda, cinnamon, and Celtic Sea Salt®. Gradually beat dry ingredients into
creamed mixture. Stir in oatmeal, chips, raisins, walnuts & coconut. Drop by
teaspoonful onto ungreased cookie sheets, flatten slightly with the back of a spoon. Bake
for 10-12 minutes, or until browned on the bottom. Enjoy!

Quinoa Salad
Serves 4
1 cup organic quinoa
1½ cups water
4 Tbsp agave syrup (or honey)
4 Tbsp fresh lime juice
¼ tsp Celtic Sea Salt®
3 Tbsp Garlic-Chile flax oil
1 small carrot, diced
¼ cup red onion, minced
½ cup toasted almonds
freshly ground black pepper, to taste
Rinse quinoa thoroughly and drain; add about 1 to 2 inches of water to pressure

What is Ayurvedic Skin Care?

Ayurveda is a 5000-year-old way of life thought to have originated
in India. Many modalities of alternative medicine have roots in
Ayurvedic principles. The term Ayurveda comes from two Vedic
words- 'ayus', meaning life, and 'veda', meaning knowledge or
science. The term 'ayurveda', then, means the science or
knowledge of life. Ayurveda is essentially a system of balancing the
body, mind & soul to produce a state of wellness. Ayurvedics see
the world as composed of five basic elements-space, air, water, fire
and earth. The balance of these five elements results in healthimbalance results in disease. Within the body, the five elements are
represented as the tridoshas-vata, pitta, and kapha.
VATA is the dosha primarily composed of air and space,
responsible for movement, circulation, and related functions.
PITTA is fire and water, and is the dosha of metabolism and
transformation.
KAPHA is composed of water and earth, and is the dosha that
regulates growth and promotes structure.
The tridoshas vata, pitta and kapha also represent three distinct
skin types. Vata skin has small pores, is dry, may be wrinkly, and
is often thin and papery. Kapha skin has large pores, is thick, is
often oily, and can be prone to blemishes. Pitta skin is sensitive,
delicate, may have moles or freckles, and can be fair-toned.
Ayurveda emphasizes treatment of the individual, and shies
away from offering generalized treatment regimens. Each
individual should customize his/her skincare regimen not only to
their body type, but also to their environment and the seasons.
That being said, there are some general principles for healthy
skin that apply to everyone. Here are some tips from the
Council of Maharishi Ayurveda Practitioners for healthy skin in
the springtime:
·To help reduce ama (toxins), you should increase the
consumption of foods that support the detoxification process.
Eat lots of leafy green vegetables, brussels sprouts and white
daikon radish. Also increase whole grains like wheat, barley
and quinoa and alternate them in your diet.These vegetables
and grains contain plenty of water-soluble fibers that aid
detoxification.
·Make sure you drink lots of pure water. Sip warm or room
temperature water during the day.To help purify your skin, add
sarsaparilla or fennel seeds to your water.
·Since springtime is kapha by nature, you need to balance this
dosha by avoiding heavy, cold and oily foods and by reducing
the sweet, sour and salty tastes. Following a light, warm and
nourishing diet also helps reduce ama (undigested food) and
support the detoxification process.
·The release of toxins cannot happen without proper
elimination. If you are prone to constipation, add cooked
prunes and figs to your diet, and eat lots of sweet, juicy fruits.
Deep breathing is also important," says The Council, "as is
regular exercise. A brisk walk can increase your metabolism,
enhance the detoxification process and improve circulation to
the skin.The fresh air and a little sunshine will also refresh your
complexion and uplift your mood."

Tips for a Healthy Cup of Joe

Legend has it that coffee was first
discovered by a goat herder in
Ethiopia who, upon noticing that his
herd became friskier after eating the
red berries of a local shrub, began
experimenting with the berries
himself. Today coffee is one of the
world's
largest
international
commodities, with US retail sales
alone of 70 billion dollars. Many of
us regard coffee as somewhat of a
guilty pleasure, but is a little coffee
really such a bad thing?
Over the past few decades, over
19,000 studies have been done
analyzing the effect of coffee on
health. Many of those studies have
been favorable-some even indicating
that coffee may be effective in
reducing the risk of colon cancer,
Parkinson's disease, and diabetes.
Additionally, coffee is known to
elevate mood, enhance alertness, and
suppress the appetite. "Overall, the
research shows that coffee is far more
healthful than it is harmful," says
Tomas DePaulis, PhD, research
scientist at Vanderbilt University's
Institute for Coffee Studies, which
conducts its own medical research
and tracks coffee studies from around
the world. "For most people, very
little bad comes from drinking it, but
a lot of good."
Nevertheless, there are some health
risks associated with excessive coffee
consumption. Most doctors advise
that pregnant women and those with
sensitive stomachs, anxiety issues, or
Gastro esophageal reflux disease
(GERD) avoid coffee. In addition,
some studies have correlated coffee
consumption with an increased risk
for arthritis and heart disease.

If you're a coffee drinker, there are some things you can do to make your java jolt as
healthy as it can possibly be:
1. Always buy organic coffee. Coffee is
one of the most heavily sprayed
agricultural crops, and is almost never
grown in the United States. Coffee and
other crops are often subjected to what
has been termed the 'circle of poison', in
which pesticides banned in the USA find
their way into the food supply through
imported products.
2. Grind fresh beans-ground coffee goes
rancid quickly (sometimes within 24
hours!) and should be avoided.
3. Don't drink coffee that has been on the
burner for a long time. Coffee can burn in
its liquid form, and is usually freshest
within 15 minutes of preparation.
5. Use good water. Coffee is 98-99%
water. Fresh, cold water contains more
oxygen, resulting in a fresher-tasting cup
of coffee.
6. Consider cold brew preparation. Cold
brew technologies, like the Toddy, reduce
the acid content of coffee by as much as
67%. In a side-by-side test of Starbucks'
regular blend, the Toddy version had a pH
of 6.31 and 40 mg of caffeine, while
Starbucks store-brewed had a pH of 5.48
and 61 mg of caffeine (lower numbers on
the pH scale denotes more acid).
Following these tips will help you enjoy a
more healthful cup of joe. Also keep in
mind the golden rule of wellness: in
coffee as in all things, moderation is key.
4. Use unbleached filters whenever
possible. Bleached filters can often impart
a papery taste, and may also leach
harmful chemicals into your morning
brew.
Drink to your Health
Are you frustrated with trying to lose weight? Have you tried to watch what you

might seem like an insignificant part of your diet, but can actually make up a

Salmon Salad with Goat Cheese
Medallions
Goat Cheese
2- 5ounce logs soft fresh goat cheese, each cut
into 4 round slices
1 egg
1 Tbsp water
1/2 cup unbleached all purpose flour
2 Tbsp ghee or coconut oil
1 cup toasted almonds, coarsely ground
Preheat oven to 350° F. Pat each goat cheese slice to
1/2-inch thickness. Whisk egg and water in small
bowl. Place flour in another small bowl. Place
almonds in shallow dish. Roll goat cheese slices in
flour, then dip into egg mixture, then roll in almonds
to coat, pressing gently to adhere. Place cheese in
glass baking dish; drizzle lightly with butter. Sprinkle
with Celtic Sea Salt® and pepper. Bake until almonds
are lightly browned, about 10 minutes.

¼ cup apple cider vinegar
