Academic career
Master Degree on Food Science and Technology at the University of Udine 1989.
Since then she collaborated as researcher and assistant professor at the Department
of Food Science of the University of Udine in the Food Technology Research Unit.
In December 2004 she was appointed Associate Professor of Food Technology at the
Faculty of Bioscience and Technology for Food, Agriculture and Environment (formerly
Agricultural Faculty, University of Teramo and Dipartimento di Scienze degli Alimenti,
until 2013), University of Teramo.
From November 2013 she is deputy Rector for Internationalisation and Joint degree
programmes of the University of Teramo
Currently she is PhD student at the PhD School in Nanotechnology of the University of
Trieste (Italy) (3rd year)
Teaching activities
She is Associate professor at the 1st and 2nd degree programmes in Food Science and
Technology and Oenology and Viticulture of the University of Teramo and is appointed
in teaching on Food science and technology disciplines.
She collaborates in teaching activities also in post-graduation courses and in the PhD
programme in Food Science of the University of Teramo.
Research in Food Science and Technology and in Food studies education
Research activity is focused on some aspects of food processing and preservation
from animal and vegetable raw materials as well as food ingredients and formulation.
On this field Paola Pittia focused her studies on the physical, chemico-physical,
technological and functional properties of foods and their changes as a consequence of
processing and storage conditions.
Since 2005 she is member of the Board of the PhD course in Food Science at the
Faculty of Bioscience and Technology for Food, Agriculture and Environment (formerly
Dipartimento di Scienze degli Alimenti, until 2013), and tutor of 7 PhD students.
Paola Pittia is co-author of more than 80 papers published on peer-reviewed national
and international journals, more than 160 papers (posters and oral) presented at
national and international congresses and workshops; 4 book chapters on International
books.
She is co-editor of two international peer-reviewed journals (International Journal of
Food Studies, Italian Journal of Food Science).
She was/is scientific coordinator of research projects funded by national and
international research centres and private companies.
Paola Pittia was vice-chairperson in the COST Action n. 921 (2002-2005) "Food
matrices: structural organisation from nano- to macro-scale and impact of flavour
release and perception", where she is also the Italian representative. She has been
substitute national representative of the COST Action FA1001 “The application of
innovative fundamental food-structure-property relationships to the design of foods for
health, wellness and pleasure” (2010-2014) and currently she is substitute national
representative of the COST Action FA1401 “POSITIVe” Interindividual variation in
response to consumption of plant food bioactives and determinants involved (20142018)
She was/is representative member of the Faculty of Agriculture of the University of
Teramo at the following EU projects (ISEKI_Food 2 (2005-2008) and ISEKI Mundus
(2007-2008) European projects; ISEKI_Food 3 and ISEKI_Mundus 2, 2008-2011,
ongoing) in which is also coordinator of a Working Package; FP7 TRACK_FAST (20092012).
She will coordinate the incoming Erasmus Academic Network project ISEKI_Food 4
(2011-2014) .
