Muscle System
Muscle:
 Lean portion of the carcass of meat
animals used for human consumption
 Consist largely of protein
 Occur in bundles or sheets
Muscle Types:
 Voluntary: Under control of the animal’s
will
 Involuntary: Not under control
 Smooth: (unstriated): some Involuntary
 Striated (striped):All voluntary and some
involuntary
Flexor (biceps):
 Responsible for decreasing the angle
between two bones when it contracts
Etensor (triceps):
 Responsible for increasing the angle
between
Gastrocnemius muscle:
 Large muscle in the
calf of the leg is a
flexor of the stifle
joint but an extensor
of the hock
Agonists:
 Muscles that produce a desired action
(triceps)
Antagonists:
 Produce the opposite of a desired action
(biceps)
Stabilizers:
 Muscles which oppose any undesired
action of agonists
Adductors:
 Muscles that pull
parts of the limbs
toward the middle of
the animal’s body
Sphincter muscle:
 Surround openings in
the body (smooth or
striated muscles)
 eyelids
