FARM:
For years Colombia has had a great reputation for its coffees, achieving always a high price,
even when market prices were low. But climate change and issues with plant diseases, afecting
greatly to Colombian crops, changed the strategy of farmers: changing traditional plant stock
for that of more disease-resistant strains such as Castillo, Catimor and Colombia, although
these aren't as interesting to the palate.
In the middle of this scenario Camilo Merizald works with varieties uniquely for its taste values,
experimenting with innovative irrigation ideas to work against climate change and even
building a giant greenhouse to experiment with coffee growing under cover. With active
agronomy, soil management and careful varietal selection this is one of the most interesting
coffee experiments we know.

Red Typica
(this lot, the farm also grows Bourbon, Geisha, Maragogype and Mocha)
PROCESS:
Washed and sun dried on concrete patios
CUPPING NOTES:
Sweet coffee that reminds to baker's chocolate and brown sugar, rounded with a sweet and
juicy lime acidity.
