GLUTEN-FREE DIET Diet Principles: 1. Wheat, rye, barley, malt and products made from these grains are excluded from the diet. 2. Cereal products made from corn, rice, gluten free flours, potato starch flour, tapioca and arrowroot may be used. 3. Labels should be read carefully and any product containing flour, emulsifier, stabilizer, hydrolyzed vegetable protein, gluten or any of the grains mentioned in #1 above, should be avoided. Check labels for gluten containing additives and gums and ask questions about unlisted ingredients added during processing. Check with your druggist, use the PDR or call the manufacturer on all medications GLUTEN FREE COOK BOOKS Visit your health food store and ask for recommendations. There are several excellent cookbooks that will help you in the transition of cooking gluten free.
