YOUR CAR GUY’S KILLER BAKED HALIBUT 1 1/4 Lbs. Potatoes, Sliced Thinly (about 4c.) 1 Onion (about 1/3lb), Sliced Thinly Into Rings 12 Tbsp. Butter Or Margarine 4 Halibut Or Cod Fillets, about 2 1/2 Lbs. Salt & Pepper To Taste 1/4c Chopped Parsley 1 Clove Garlic 1/2c. Bread Crumbs 1/2c. Dry White Wine Preheat oven to 425 degrees. Prepare potatoes and keep covered with cold water. Prepare the onion rings and set aside. Rub baking dish with 6 tbsp of butter/margarine. Fold each fillet over itself and arrange down center of baking dish. Sprinkle with salt & pepper. Drain potatoes and put in bowl. Add onions, parsley, garlic, salt & pepper to taste. Mix well. Arrange the vegetable mixture around the fillets. Dot with remaining butter, sprinkle fish with bread crumbs. Add the wine. Bake 30-40 min. as the fish bakes, tilt the baking dish and spoon the liquid over the fish. Serves 4.
