Degree in Biological Sciences at the University of Lecce, Italy. Degree thesis on Physiology. 1994-1996. Stage at the laboratory of General Physiology of the University of Lecce directed by Prof. C. Storelli, developing studies on the ions transportations by means of electrophysiological techniques . 1997-1999 Stage at National Research Council, Institute of Research on Agro-food Biotechology - Lecce, developing research on “Metabolism of lipids and fat acids in almond seeds”. 2002, 2009. Stage at the University of Verona, joining at the research group of Dr. F. Dellaglio, studying the isolation and the characterization of yeast and bacterial strains from must grapes and wines by using biochemical and molecular analysis. Career and research activity 1997-1998 Research activity at the Institute of Research on Agro-food Biotechology - Lecce, contributing to the research project “Metabolism of lipids and fatty acids in almond seeds”. 1999-2001. Temporary position at the Institute of Research on Agro-alimentary Biotechnology, C.N.R., Lecce, Italy contributing to the European Community Project: FAIR N° CT97-3224, N° CT 99-3224 “Adverse reactions to foods” for identification of allergens contained in almond seeds. 2001 present day. Permanent position as Researcher at the Institute of Sciences of Food Production, C.N.R. section of Lecce. The main activity is focused on the characterization and exploitation of the microbes germoplasm in the agro-food productions. Dr. Maria Stella Cappello is coautor of forty one publication including papers published on JCR journal and communications to national and international congresses. Research Interests The main interest of research is focused on the characterization and valorisation of the autochthonous germoplasm of yeast and bacteria during must fermentation and wine-making. Particularly: 1)selection and biochemical and molecular characterization of yeast and bacteria strains which confer special characteristic and exalt the typical flavours to the wines; 2) physiological characterization of the yeast strains (fermentation of sugars, production of ethanol, glycerol, hydrogen sulphured, flavours, analysis of enzymes and proteins associated to the fermentation process.
