Abstract:
This work was carried out to determine the chemical
compositions of raw milk and some home-made dairy products
obtained from some villages in Assiut Governorate, evaluate the
concentration of some trace and major elements in milk and
milk products and to evaluate the incidence of Pb and Cd as
toxic heavy metals in these products. For this approximately
100 samples of milk and some of home-made milk products
were collected from certain villages in Assiut Governorate and
analyzed for their chemical compositions and some of their
elements contents. 1- Raw milk components: 1.1. Chemical
compositions of raw milk: Generally, it was found that the
chemical composition of ewe’s milk characterized with high
specific gravity, total solids, protein, fat and lactose contents as
compared with the other types of milk under study with highly
