Discussion about matter and energy cycle, biodiversity as the source of food diversity, will be presented as the foundation of environmental management and ecosystem, whereas food system as part of ecosystem. Sociological and anthropological aspects of environmental problems will be covered in this course to demonstrate human position in environmental problems (i.e. pollution and food safety, climate change and food security). Food globalization and sustainable food 2production will be highlighted both theoretically and application according to actual condition. This course comprises of understanding about anatomy and composition about plant culture, respiration metabolism, climacteric- and non climacteric respiration pattern, plant hormone system, ethylene bio-synthesis and its role, physicochemical changes during post harvest, physiological response toward deterioration, preservation treatment (including atmosphere composition control, such as MAP-CAS). This course will discuss about definition of food quality and its influence factors, physicochemical, microbiological and sensory characteristics of food.
