To increase the colouring power of the
plant powder, Lessonia uses a
micronising technology based on a very
high speed airflow.
The blue colour of the pigment
extracted from the fruit of the gardenia
is due to genipin, an aglycone
discovered in 1960 which turns blue
when combined with amino acids.

Gardenias are widely used as exotic ornamental flowers in
corsages, as houseplants, and in some regions, as outdoor plants.
A yellow silk dye has been made for centuries from the chemical
compound acrocetin extracted from the gardenia berry. The blue
pigments are edible and are currently being used as a blue food
colorant in East Asia.
