Carbohydrates were extracted from a sample of milk from a mink, Mustela vison (Family Mustelidae). Free neutral and acidic
oligosaccharides were isolated from the carbohydrate fraction and their chemical structures were compared with those of
white-nosed coati (Nasua narica, Procyonidae) and harbour seal (Phoca vitulina, Phocidae) that we had studied previously. The
ratio of free lactose to milk oligosaccharides was similar to that in milk of the white-nosed coati; in both species, this ratio was
much lower than that in the milk of most eutherians. The neutral oligosaccharides of mink milk had alpha(1-3)-linked Gal or
alpha(1-2)-linked Fuc residues at their non-reducing ends, as in the neutral oligosaccharides of white-nosed coati milk. Some of

Selection of lactic yeast producing glucosylceramide from cheese whey

From 2150 isolates from raw milk and milk products, yeast strains were surveyed to produce glucosylceramide from cheese whey.
Most of the 54 strains that had accumulated a detectable amount of glucosylceramide were identified as Kluyveromyces lactis var.
lactis. The cells of K. lactis var. lactis strain M-11 derived from domestic raw milk accumulated glucosylceramide 2.5-fold higher
than K. lactis var. lactis NBRC 1267, the reference strain selected from the culture collections. Strain M-16 of K. lactis var. lactis
derived from the same origin was found to synthesize a considerable amount of steryl glucoside in addition to glucosylceramide.

A neutral exopolysaccharide produced in large amounts by Lactobacillus fermentum TDS030603 was purified from culture
supernatants and its structure determined by monosaccharide analysis, methylation analysis and 1H-NMR spectroscopy. Optimum
conditions for the production of this exopolysaccharide by the above bacterial strain, when cultured using cheese whey medium or
MRS broth, were also investigated. The exopolysaccharide was found to be composed of D-galactose and D-glucose in the molar
ratio of 1:2.5 and to consist of one major as well as one minor saccharide, both of which contained a tetrasaccharide repeating unit

生乳中の酵母検出率と酵母数の季節変動

生乳中の酵母の動態を明らかにすることを目的として,帯広畜産大学と近郊の酪農家3戸で飼養している健康なホル
スタイン種乳牛(体細胞数1×105cfu/ml以下)の乳頭表皮,分房乳,バルク乳およびローリー乳中の酵母数の月別変動
について調べた.各試料は1999年7月から2000年6月までの1年間,それぞれ毎月1回ずつ採取した.生乳中の酵母の検
出率と平均酵母数はそれぞれ順に,乳頭表皮では70.1%,52cfu/cm2,分房乳は47.9%,1.8cfu/ml,バルク乳は100%,
28cfu/mlおよびローリー乳では100%,66cfu/mlであった.乳頭表皮および各種類の生乳中において90%以上を占める
酵母数の水準は,乳頭表皮が150cfu/cm2以下(90.8%),分房乳が10cfu/ml以下(94.4%),バルク乳が100cfu/ml以下
(97.8%)およびローリー乳が150cfu/ml以下(91.7%)であると考えられた.生乳中の酵母数は夏から秋期に高く,冬
から春期に低くなる季節的な変動傾向が認められた.健康な乳牛の分房乳中では,主な乳房炎起因菌(C. parapsilosis,

Microflora of lactic acid bacteria and yeasts of Laban which had been made with bovine or ovine milk by traditional natural
fermentation in Yemen,were studied. The mean of viable cell counts of microorganisms in Laban was 6.4 x10⁸ cfu/ml. The 60
strains of lactic acid bacteria and 24 strains of yeasts were isolated and identified. The percentages of strains on lactic acid bacteria
flora were as follows: Lactococcus lactis subsp.lactis① was dominant in 88%. Lc. lactis subsp. lactis② , Leuconostoc
mesenteroides subsp. mesenteroides,and Leuc. lactis were in 5,5,and 2%,respectively. It was recognized that the some

The concentrations of the six major sialyl oligosaccharides found in the milk of 24 Japanese women were determined using
reverse phase high performance liquid chromatography of the 3-methyl-1-phenyl-5- pyrazolone derivatives of the
oligosaccharides. The milk was collected at 4, 10, 30 and 100 days postpartum. The concentrations of all six oligosaccharides
decreased
during
the
course
of
lactation.
The
concentrations
of
6'-sialyllactose,
sialyllacto-N-tetraose
b
and
disialyllacto-N-tetraose decreased only after 10 days postpartum, whereas those of sialyllacto-N-tetraose a and

The activity of α3-D-mannoside-β-1,2-N-acetylglucosaminyltransferase I (GnT I; EC 2.4.1.101), which catalyzes the first step in
the conversion of oligomannose to complex or hybrid N-glycans of glycoproteins, was detected in bovine follicular fluid (bFF).
The GnT I activity in bFF had a pH optimum of 5.8 and an absolute requirement for either Co2+, Mn2+, or Mg2+, the activity
being stimulated by these cations in the above order. The apparent Km value for α1-3α1-6 mannopentaose of GnT I in bFF was
2.17 mM. The substrate specificity for the GnT I activity decreased in the following order: α1-3α1-6 mannopentaose>

Cell wall polysaccharides were separated from Leuconostoc mesenteroides subsp. cremoris isolated from “Filmjolk" , a
fermented milk made commercially in Sweden. Two Components(CNPI and CNP2) were further purified by gelfiltration on
HPLC and the molecu1ar weights were
determined to be 850 , 000 and 81 , 000. CNP-2 was shown to contain two
polysaccharides in major and minor by an lH-NMR. The major polysaccharide was shown to have a heptasaccharide repeating
unit which contained five α and two β anomers,and also contained non reducing galactopyranose,O-2,3 disubstituted
glucopyranose,O-3 substituted galactopyranose and O-3,6 disubstituted galactopyranose as units in a molar ratio of 3:1:1:2.
