Can you help me set the temperature for holding the hot sauces during service?
Answer: 60°C or above. Above this temperature, bacteria stop multiplying reducing the risk of food
poisoning.
Can you now help me check the storage time for sauces?
How long can you store sauces below 4°C?
Answer: Up to 1 week. The sauce is reasonably safe at this temperature with little bacterial growth.
How long can you store frozen sauces?
Answer: Up to 6 months. The sauce is safe and reasonably fresh for this length of time. After 6 months,
the sauce will lose its flavour and quality.
If I use a re-heated sauce, what must I do to it at the end of service?
Freeze immediately after service
Throw the sauce out after service
Keep at 70°C until the next service.
Answer: Throw the sauce out after service. This is the best idea. It is good food hygiene practice to
discard re-heated food.
