XI. Harvest
Quality broccoli heads are usually harvested when they reach full size
and are firm; never wait until the flower buds begin to open. When cutting,
include around 8-9 inches of the stem from the base of the flower head
(depending on the market requirement). It is best to harvest the heads in early
morning. Packing should be started as soon as possible after cutting.
