Useful Tips
Baking Substitute – In most cases, White Mountain
Yogurt may be substituted for sour milk, buttermilk,
or sour cream in recipes for pancakes, waffles, tea
bread, and muffins. 1 tablespoon of our yogurt can be
used as an egg substitute in cookie recipes
Recipes
Yogurt Chicken
2 cups premium or nonfat yogurt
2 lbs. boneless, skinless chicken breasts
1 cup olive oil
2-3 cloves crushed garlic
1/2 cup dry white wine or chicken stock
1 tsp. chopped fresh basil
1/2 cup chopped Italian flat leaf parsley
2 medium yellow onions [sliced]
Salt and pepper to taste
Combine olive oil, garlic, wine/stock, and basil in a
shallow baking dish and add the chicken breasts so
they are covered with the marinade. Cover and let the
chicken marinate over night in the refrigerator. Heat a
pan with a tablespoon of olive oil and brown the
chicken on both sides. Discard the marinade. In
another pan, add 2 tablespoons of olive oil and sauté
the onions until they are golden. Place the chicken in
the pan with the onions. Sprinkle with chopped
parsley and serve.
Tzatziki Sauce
One pint Nonfat or Premium yogurt
Crushed garlic to taste
Zest and juice of one-half lemon
Two tablespoons olive oil
One-half tsp. finely chopped parsley, mint, & dill
Combine all ingredients in a bowl and
refrigerate.
White Mountain Smoothie
Combine equal parts NonFat or Premium yogurt,
frozen banana, apple juice and pineapple coconut
juice. Mix in a blender.
Chilled Yogurt and Cucumber
Soup
2 cups White Mountain Yogurt
2-3 Cucumbers, finely diced
½ cup ground walnuts
3-4 cloves crushed garlic
1 tsp. Finely chopped dill
¼ cup sunflower oil
Salt to taste
Beat the yogurt; add garlic, walnuts, cucumbers, oil
and salt. Stir and dilute with cold water. Serve
sprinkled with finely chopped dill. Makes 3-4
servings.
Honey Ambrosia

Bulgarian Yogurt
1-cup premium or nonfat yogurt
2 cups pineapple chunks in juice
2 medium oranges
2 bananas
¾ cup coconut
¼ cup honey


Premium (Whole Milk)
Non – Fat (Skim Milk)
Vegan Tamales
Mix together yogurt, honey, and coconut. Drain
pineapple, peel and separate orange sections, slice the
bananas; mix fruit together. Pour yogurt-honey
mixture over fruit and stir.



Non-GMO Tofu
Yogurt Fennel Sauce
½ Cup premium or nonfat yogurt
1 Bulb fennel, trimmed, thinly sliced
2 Shallots, sliced
1-2 cloves crushed garlic
4 Tbsp. white wine vinegar
¾ Cup Vegetable OR Chicken broth
1 tsp. fresh thyme leaves
Tabasco sauce to taste
Salt and pepper to taste
Combine all ingredients in a bowl & refrigerate.

Spoon 2 cups of Nonfat or Premium yogurt into a
cheesecloth. Tie cheesecloth closed at the top and
hang the “bag” over a bowl and allow the whey to
drain off overnight in the refrigerator. Flavor with
fruit, sweetener or herrbs and spices…delicious!

PREMIUM BULGARIAN YOGURT - Yes,
everyone testifies to the nutritional benefits of
WM Yogurt. This is obvious but I have worked
as a chef/cook for about 35 years in some of the
best fine dining facilities. For flavor,
consistency, and authenticity there is no
comparison to White Mountain Yogurt. I have
traveled extensively in India, Spain, and spent
quite a bit of time in Eastern Europe. Authentic
yogurt, I'm afraid to say is not so easy to find
internationally. We have the real deal here in
Texas and it's readily available. There is a
negative
to
White
Mountain
Yogurt
though. Once one is accustomed to White
Mountain Yogurt, none other will do. No (yes,
none!) other yogurt has the flavor, the
consistency, the authenticity, and most
importantly digestibility. The irony is yours is
probably the easiest to produce with the least
amount of ingredients.

I love your yogurt! I am Bulgarian and we
Bulgarians eat and drink yogurt every day. Your
yogurt is the yogurt I used to eat when I was
living in Bulgaria. I even taught my American
husband to drink the yogurt. I must tell you that
your yogurt tastes exactly like the yogurt people
make in Bulgaria! Congratulations on making
