Module Enhancements
• Elementary School
– Introducing the Food Pyramid (creation of 3-D Food
Pyramid puzzle).
– Digestive system to show release of digestive juices
– Food habits of different countries (primary foods
exported/imported).
Module Enhancements
• Middle School
– Introducing different starch/protein products and using
potassium iodide to determine the presence of starch.
– Food and activity log/diary.
– Introduction of acids and bases using red cabbage
juice as an indicator for understanding pH.
– Compare and contrast line graphs depicting the
digestion of carbohydrates, glucose levels, and insulin
production.
Engineering Design
• Middle School
– Design or customize food labels for different foods
containing carbohydrates, proteins, and fats.
– Design a menu (nutritional planner) for peoples with
Type 1 Diabetes Mellitus.
Engineering Design
• Elementary School
– Design a 3-D model of the human digestive system
using common materials such as balloons, straws,
modeling clay, food items, etc.
– Food Pyramid Puzzle – students determine
appropriate puzzle pieces according to the number of
servings per food group.
Scientific Inquiry
• Students create a food menu for healthy people
as well as people with Type 1 Diabetes Mellitus
• Introduction of acids and bases using red
cabbage juice as an indicator for understanding
pH.
• Questioning/interview people with or associated
with Type 1 Diabetes Mellitus.

(pictures of different scientists/engineers as well

• Activity #5 – pH lab modified for elementary
school students – “Where are acids and bases
found in our world?”
• Activity #9 and #10 – Displaying data within the
same graph for comparison. Overlap graphs on
multiple overhead transparencies in order to view
similarities and differences between blood
glucose and insulin peaks.
