Project Title: Dietary Fiber-Rich Low-Calorie Food Products
Science Team PI: Gela Sulaberidze
Institute: Tbilisi State Medical University
Partner: Ltd “Eqvatori”
The product is a dietary fiber-rich, low-calorie food to be made in a consumer-recognizable and
popular commodity form. One of the main reasons of development of the most urgent today health
problems, such as obesity and chronic non-communicable diseases (myocardial infarction, angina
pectoris, atherosclerosis, essential hypertension, choleliathiasis, irritable bowel syndrome, diabetes
mellitus, etc.), is improper diet. The low-calorie, dietary fiber-rich food product is the most
important component of prevention and treatment of these disorders. The product will be made on
the basis of a food combination composed of dietary fibers that have been processed by a
technology developed and patented by us. This technology is based on physiological processes of
food digestion by the human gastrointestinal tract. It facilitates digestibility of dietary fibers, avoids
the irritant action and loss of useful food properties upon processing. Newly developed products will
have the same look as similar dishes widely used in everyday diet. Our technology makes possible
to change commodity form of the product in accordance with market demands. It is notable, that
after processing the hydrophobic film covering crude natural fibers turns into the hydrophilic,
therefore natural gustatory properties are better manifested, what in turn improves the taste of food.
 Target customers are the people with excess weight and those ill with and running the risks of
development of chronic and noncommunicable diseases (myocardium infarction, atherosclerosis,
essential hypertension, cholecystitis, irritated bowels syndrome, diabetes mellitus, etc.).
 The target market for the products is very large, which is indicated at least by the statistics
published by the WHO (2011). 12.5% of the population over 25 years of age in Georgia is ill
with diabetes, 19.5% is with excess weight, among the causes of lethality the most frequent are
chronic noncommunicable diseases, accounting for 22.5% of total mortality.
 In addition to the target market, the products can also be used by healthy population. The
consumption of dietary fibers renders a positive effect on the healthy organism as well, protects
it from developing a number of diseases, and helps maintain the optimal weight.
Supposedly, consumers of the new food product, muesli, developed on the basis of the patented food
combination will make approximately up to 200 people at the starting point. By the end of the first
quarter, the planned monthly output will make 350 packs of muesli, which means that production
will already be profitable. According to our analysis, in two quarters from the launch of production,
the sales will increase up to 500 packs in a month, and up to a thousand by the year’s end.
Given that the ground meat is a perishable product, its production will proceed in small batches
(50kg/month) and sold through fast-food facilities. Based on the preliminary study results, sale of
the minced meat products will increase up to 150kg/month by the year’s end.
