Academic description of the project:
The present project will identify and characterize high value biological molecules from waste and side streams
of the fish industry and develop biotechnological methods for their extraction and recovery. The products envisaged are novel cold active enzymes for laundry and detergents, valuable shell fish polysaccharides convertible for high value saccharides for use as functional and bacteriostatic ingredients in food and health care.
