FOOD INGREDIENTS AND SPRAY DRIED POWDERS
Juices and or Pulp of most Fruits can be converted into free flowing Powder by spray
drying route (just like Milk Powder from Milk) . Filtered Fruit Juice is
homogenised before feeding to a Spray dryer. Dehumidified air at Dryer outlet
prevents lumping of powder (Fruit powders are Hygroscopic in Nature) and packed
immediately (If required with Nitrogen) . Spray dryers have also Nozzle system to
feed Pulp like Tomato. The natural flavour, colour and taste are intact.
Various Spray Dried Powders are available from Southern Citrus.
Fruit/ Vegetable Powders
Banana, Guava, Custard Apple, Mango, Orange, Papaya, Pine Apple, Pomegranate,
Sugar Cane, Water Melon, Indian Gooseberry (Amla), Carrot, Beetroot, Lime,
Tamarind, Tomato
Any Other Fruit or Vegetable Powder
Application: All these Powders are used in Fruit Salads / Ice Creams / Beverages /
Natural colours / culinary applications.

Calcium Caseinate
Calcium Caseinate is a protein that neutralizes capsaicin, the active (hot) ingredient of
peppers; it is also used as a dietary supplement by bodybuilders and athletes.
Cheese powder
Powdered cheese is made by spray drying cheese slurry, using much the same
process as when making powdered milk. Our powdered cheese contains only cheese
with emulsifiers so it will blend well with water and make a nice, smooth sauce.
Milk Shake Powder (Banana etc)
Milk shake powders in various fruit flavours like Banana, Mango, Pine Apple are
available. They are soluble in water. They are a tasty and nutritive option to enhance
the taste of Milk.
Sodium Caseinate
The product is sourced from milk and is used as a protein. The nature of the product is
free flowing and colour is off-white. Odour and taste are characteristic. It is used as a
dietary supplement for proteins and most importantly as Meat Tenderiser.( softener )
Soya Protein Isolate
Soya Protein is made from Soya hulls once the oil has been extracted. It is an
excellent source of nutrition and contains 90% Protein.
Soya protein contains no cholesterol. almost no fat and is low in sodium. It is high in
potassium, a good source of essential amino acids.
Vegetable Fat Powder
Free Flowing Powders with about 50% Fat from various Oils like Coconut/ Palm/ Sun
Flower / Vanaspati (Hydrogenated Vegetable Oil) are made at Southern Citrus.
Applications: A replacement of cream which gives higher stability and conservation,
for ice-cream, biscuits, soups, sauces, chocolate , drinks, blends etc....
It is a convenient form for adding richness to many products without the problems
associated with solid or liquid vegetable fats or the shelf life limitations of butterfat.
Yoghurt Powder
Curd is spray dried into fine free flowing powder. It may not have the useful
bacteria like in curds but, it is very convenient to make beverages like Yoghurt
Shakes (Lassi), Buttermilk which are thirst quenchers and coolants.
Different flavours are available.
OSMOTIC DEHYDRATED FRUITS
Fruits in general contain more than 75% water and get spoiled very quickly, if not
stored properly. Even proper storage fails to preserve the fruits for a longer period
unless they are dehydrated. The Osmotic Dehydration is a unique technique
developed along with Indian Institute of Horticultural Research (IIHR, Bangalore)
which not only enables the storage of fruits for a longer period, but also preserves
Flavour, nutritional characteristics and prevents microbial spoilage.
Osmotic Dehydration can remove 30-50% of the water from fresh ripened fruits and
final drying of the fruit pieces to around 10-12% moisture takes place in Vacuum
Drying. The final product is much superior in Appearance, Taste, Flavour and Colour
compared to conventional drying of fruits. The Osmotic dehydrated Fruit bar is a
Healthy Ready to Eat Snack for all, Specially School going children, Elderly and
Armed Forces at remote areas and Project sites.
