Catalyses the inter-conversion of L-aspartate + 2-oxoglutarate and
oxaloacetate + L-glutamate

Commonly employed in the enzymatic measurement of L-malic acid
Usage:
Agitate vial sufficiently to fully homogenise enzyme precipitate before
use.
Assay:
One unit is defined as the amount of enzyme required to produce 1
μmol of NAD+ from NADH in a reaction mixture containing 135 mM
Tris-HCl, pH 8.5, 30 mM L-aspartic acid, 30 mM α-Ketoglutaric acid,
0.24 mM NADH and 40 U/mL of L-Malate dehydrogenase, at 25 °C.
