Liz Applegate School Food Authority Manager [email protected] Liz Applegate is a Registered Dietitian and is an expert with 10 years of pediatric nutrition experience. Recognizing that nutrition and proper growth are of significant importance during the school years, she initiated and managed the Child and Adult Food Program (CACFP) at her previous establishment. Liz was successful in providing quality, nutritious meals within the regulations put forth from the state including meal patterns, portion control and nutrient restrictions. She enjoys working one on one or in group settings with children and parents to create a menu that is appealing to meet food preferences while assuring healthy selections and variety to maximize learning ability. Liz is a benefactor of The School Breakfast and National School Lunch Programs which will provide children at the CEB with healthy foods including whole grains, fruits, vegetables, lean protein and low fat milk to their daily menus. Although some children may not be accustomed to some food items, Liz hopes to provide the opportunity to expand children’s taste buds and desensitize negative perceptions to "healthy" foods. By educating them on the benefits of incorporating new foods into their daily diet while at school, Liz looks forward to having the opportunity to teach children about the correlation between healthy nutrition and exceling in educational achievements. Well-nourished children show increased school attendance, higher test scores, improved concentration and behavior. By meeting children’s nutritional needs during the day with healthy and appropriate food selections along with incorporating parent understanding and support, the children at CEB will excel and Liz’s goal of ensuring success, health and happiness of every child will be met. Liz received her Bachelors of Science in Dietetics and Minor in Food Service Management from the University of Delaware and completed her dietetic internship in North Carolina. Her love for Delaware brought her back home to support her local community. Her career includes clinical and food service experience at Bayhealth Medical Center, Christiana Care Health Services and Nurses N’Kids.
