Foods are generally classified by their metabolic process as either acid or
alkaline. Alkaline are soluble salts and acids are corrosive agents. A
balanced diet should contain about 40% of acid forming foods and 60% of

Acid and alkaline is commonly known as the pH Balance. PH stands for
“potential” of “Hydrogen.” It is the amount of hydrogen ions in a particular
solution. If there are more ions, the solution is acidic, while fewer ions

alkalinity on a scale of zero to fourteen. A reading of zero indicates that the
