Why do some foods give people
a bad reaction?

Food reactions fall into two classifications
these include:


food allergies –The body’s reaction to a protein
that triggers an immune response
food intolerance – A body’s reaction to a food
that may cause distress, but not an immune
response. Lactose intolerance and gluten
intolerance fall into this category.

Food Allergies


The FDA now requires that the most common food allergens be
identified on food labels.
The eight most common food allergens are:
 Milk
 Eggs
 Peanuts
 Tree nuts
 Wheat
 Soy
 Shellfish
 Fish
All these foods contain proteins.

What is a food allergy?

“Food allergy is an abnormal response to a
food, triggered by the body’s immune system.”

Food allergies often appear suddenly.
What symptoms may occur?


Hives, itching, skin rash, trouble breathing, swelling,
dizziness or fainting
Food allergies can even be fatal (cause death)

Food Intolerance



A physical reaction to food but does not
involve the immune system.
May develop and worsen over time
An intolerance usually is a less serious
digestive problem and may include:



Lactose intolerance (milk)
Gluten intolerance (wheat protein)
Food Intolerances often result from the body’s
inability to process (digest or break down) a
certain food or nutrient.
