Mediterranean Turkey Burgers

Ingredients
3 tablespoons extra-virgin olive oil, divided
1/2 cup finely chopped onion
1 (5-oz.) ounce package baby spinach
Kosher salt and freshly ground black pepper
1 cup plain, nonfat Greek yogurt
2 1/2 teaspoons minced garlic
1 teaspoon fresh lemon juice
Salt and pepper to taste
1 pound extra lean or lean ground turkey
3 ounces crumbled feta cheese (about 1/2 cup, slightly heaping)
1/2 cup diced Sunsweet Prunes
1 teaspoon finely grated lemon zest
3/4 teaspoon hot paprika
1/2 teaspoon ground cumin
4 hamburger buns, split and toasted
Cooking Instructions
Heat 1 tablespoon of olive oil in a large nonstick skillet over medium heat. Add
onion, and cook for about 6 minutes or until golden brown, stirring occasionally.
Increase heat to medium-high and add spinach to skillet; cook until spinach is
wilted, stirring frequently. Season with salt and pepper and transfer to a medium
bowl. Refrigerate until cooled to room temperature. Wipe out skillet and set
aside.
While spinach is cooling, stir together yogurt, garlic and lemon juice in a medium
bowl. Add salt and pepper and set aside. Once the spinach has cooled, place in
a large bowl with ground turkey, feta, prunes, lemon zest, paprika and cumin. Mix
well and shape into 4 patties, each about 1/2-inch thick.
Add the remaining 2 tablespoons olive oil to the skillet and set over medium heat.
Season burgers on both sides with salt and pepper. Add to the skillet and cook
until just cooked through, about 6 minutes per side. Spread some of the yogurt
sauce on the bottom half of each bun and top each with a burger. Spoon the
remaining sauce over the burgers and top with remaining bun halves. Serve
immediately.
